Drumstick Potato Curry - Sahjan Phali Curry

Drumstick tree is called the "Power house of minerals" and it is also known as Poor Man's Bone's food. Drumstick is known as Saijan or ‘Sajan, Shinga, seeng, singhi, Sejanki ki phali, Saijan ki phalli. Drumstick scientifically called as Moringa oleifera. Other common names of this vegetable are Shengya / Shevga (Marathi), Murungakkai (Tamil), Saragva/ Sing (Gujarati), Singyu/ singhi (Sindhi)..

◾Ingredients required 

2- 3 drum sticks 
2-3 medium size potatoes 
100 grams peas (frozen)
2-3 tomatoes (puree) 
3tbsp makhana (foxnut)
1tsp cumin seeds 
¼ tsp asafoetida (hing)
 1-2 green chillies 
 1tsp cooking oil
Salt to taste 


◾Method

♨ Step 1 Mise en place

Drumsticks - scraped, cut into 2 inch pieces.

Potatoes - cut into quarters

Tomatoes - pureed




Makhana - dry roast for 2-3 minutes 


♨ Step 2 - Cooking Time


Heat oil in a deep fry pan over medium heat, add cumin seeds and asafoetida, when seeds splutter add potatoes and peas.



Saute on slow flame for 3-5 minutes. Add all the dry ingredients i.e turmeric powder, coriander powder, red chilly powder and salt to taste. Add drumsticks and makhana (fox nut) and cook for 2-3 minutes.




Add the tomato puree. Mix well and saute again for 3-5 minutes, add 2 -3 cups water, cover and cook on slow the flame for 10-12 minutes. When potatoes and drumstick looks cooked switch off the gas stove.










Serve immediately with hot steamed rice..
