Overnight Soaked Chia Seeds With Coconut Milk

How to make Chia seed pudding..

I'm back with one more healthy, super quick, very delicious and easy chia seeds recipe for you. Sharing recipe with step by step photos.

Chia are the seeds of plant Salvia hispanica. This plant is widely cultivated for its edible seed in southern Mexico and Guatemala. These seeds prima facie look similar to our Indian Sabja aka basil aka Falooda seeds, but both are completely different from each other in numerous ways. 

The term Chia literally means "Strength" in the Mayan language. These tiny seeds are also known as Runners Food because it's a complete source of protein, as containing all the eight essential amino acids. They are not only rich in antioxidants, but also excellent source of omega 3 fatty acids, protein, dietary fibre and packed with impressive quantities of calcium, magnesium, phosphorus, iron and zinc.

Chia seeds can be eaten cooked or raw. In raw form, they can be sprinkled on cereals, oatmeal or smoothies. But it is advisable before eating, soak them for at least 4-5 hours or go for overnight soaking. I prefer overnight soaking. 

Today I'm going to share two ways to make this recipe. It depends on my mood and availability of time. If I'm tired and not in a mood to make, I just simply soak them in normal water and at times I follow complete recipe at the time of soaking chia. Both works great on these tiny seeds. 

This is very simple and basic Chia seeds recipe. I genuinely believe in simplicity  so  rather complicating recipe  with expensive, exotic fruits and nuts,  kept it very simple. Once you'll become used to Chia seeds, you can easily incorporate your favourite fruits and nuts and make it real interesting.. . .

Let's get started 
This is the first method 

Recipe details 

  • Preparation time 5 minutes 
  • Soaking - preferably overnight or for atleast 4-5 hours.
  • Cooking time 1 minute or two
  • Serving 1-2 

Ingredients required

For coconut milk 

✅1 cup coconut milk 

---------- OR ------------

✅3 tbsp coconut milk powder
✅One cup of water

Other ingredients 

✅2tbsp Chia seeds
✅3-4 tsp sugar or honey or date syrup or as preferred 

First method

◾In a saucepan, add water, coconut milk powder and sugar to taste. Mix it all well. Cook it on slow flame until sugar is fully dissolved. 

◾Add Chia seeds. Mix it well. Allow it to come to room temperature and then keep it in the refrigerator for overnight.

◾Next day, remove from the refrigerator, transfer it in serving glass, enjoy as it is or top it with your preferred fruit or dry fruit. Serve it immediately.


Second method 

Ingredients required

✅2tbsp Chia seeds + 1 cup water

Other ingredients - For coconut milk

✅3 tbsp coconut milk powder
✅½ cup water
✅3-4 tsp sugar or honey or date syrup or as preferred 

Step 1 Soak the Chia seeds in water 

◾Combine the chia seeds and water in a mason jar. Stir together until completely mixed. Cover and refrigerate for at least 4 hours or preferably go for overnight soaking.

Step 2 On the next morning - prepare the coconut milk & serve..

◾Combine coconut milk powder, water and sugar in a saucepan. Mix it all well. Cook it on slow flame for 2-3 minutes until sugar is completely dissolved.  add soaked Chia seeds in the coconut milk. Mix it all well. Serve it immediately and enjoy!
