For Bread Pakora

  • 10-12 Bread slices
  • 5-6 Cheese slices
  • Oil for deep frying

Method

Step 1 Mise en place

◾Potatoes - boiled - peeled and mashed

◾Garlic peeled and roughly chopped

◾Green paste - coarse grinder - green chillies, curry leaves, ginger, garlic & coriander leaves

◾Coarsely grinder - cumin seeds & coriander seeds

Step 2 Prepare Batata Vada Stuffing

◾Heat the oil, add the mustard seeds, when the seeds begin to crackle, slow the gas flame, add coarsely grinder cumin seeds, coriander seeds and green paste. Stir fry for 15 - 20 seconds. Add the mashed potatoes, red chilly powder, dry mango powder, garam masala powder and salt to taste. Mix it all well. Keep it aside until called for..

Step 3 Batter for bread Pakoda

◾For the batter - add the gram flour into a mixing bowl. Add turmeric powder, red chilly powder, soda bicarbonate, salt to taste, 1 tbsp hot cooking oil and water as needed and make a smooth, lump free batter of medium thick consistency, that gets easily coated on bread slices.. Allow the batter to rest for 5-10 minutes.

Step 4 stuff bread slices

◾Take the bread slice. Top it with cheese slice and then spread 1-2 tbsp of potato stuffing evenly over it. Cover it with another slice of bread. Press it and then cut into halves or as desired..

Step 5 Fry

◾Heat the oil in deep fry pan over medium high heat. Dip the stuffed bread slices in gram flour batter and evenly coat it with the batter. Place carefully in medium hot oil and deep fry both the sides till crispy and golden. Once done, remove it with the help of perforated spoon. Place it on kitchen paper towel to drain extra oil.

◾Serve hot with tomato ketchup, spicy coriander, mint chutney or chutney of your taste.
