Arbi Kanda Masala



How to make Arbi Kanda Masala | Sukhi Arbi Ki Sabzi | Colocasia roots ki Sabzi | Arvi root sabzi | Taro Root Vegetable | Arbi do Pyaza


Arbi Kanda Masala is very delicious spicy Arbi preparation cooked in onion tomato based gravy and flavored with Indian spices.

Today I am going to share yet another Arbi preparation. After Arbi Masala Fry, this is second most preferred Arbi recipe in our house. This onion, tomato based gravy works great on many vegetables. To enjoy this arbi recipe, green chillies should be added in good quantity and onion should be cooked nicely.


If you want to enjoy recipe made from Colocasia root, you need to cook it very nicely, but it shouldn't be overcooked or mushy. It should never be consumed in raw form as the reason is the presence of calcium oxalate crystals. To reduce the toxic effects of this root vegetable, place them in cold water for overnight. Milk and other calcium rich foods should be eaten along with the Arbi in order to block oxalate absorption. When pressure cooking add a few drops of lemon juice or tamarind or pinch of baking soda. Raw and uncooked Arbi root vegetable will give you a lot of discomfort and itching in the throat and affect the mucous membrane in a very bad way, so take good care when consuming this vegetable. 


The common names of this root vegetable are Colocasia roots , Taro roots, Arvi, Arbi, Alu, Kachaloo, Kesu, chembu, cocoyam, dasheen, colocasia, elephant's ear, kachalu and Bengali Kochu

⬇Recipe details

⬇Ingredients required 


200 g Arbi (Boiled, peeled and cut into halves) 
3 medium size Onions, roughly chopped
2 Tomatoes - pureed 
1 small piece Ginger, peeled and chopped
3 Green chilies
1tsp Turmeric
2 tsp Coriander powder
2tsp Red Chili powder
1tsp Garam Masala Powder
60-70ml Oil for shallow frying and cooking
Salt to taste

⬇ Method


Step 1 Mise en place 


♨ Rinse the Arbi under running water. Boil and peel the skin and cut them into halves.

♨ Onions - Peel and roughly chopped 

♨ Tomatoes - finely chopped or puree it.

♨Ginger Peel and chopped 

♨Green chillies - finely chopped.



Step 2 Shallow Fry 

♨ Heat oil in deep fry pan and fry Arbi till golden brown in color. Remove to a plate and keep aside until needed.





Step 3: Gravy Preparation 


♨ Heat oil in a frying pan and cook onions on high flame till light brown in color. 




♨ Add tomato puree, ginger and green chilies, cook for 2- 3 minutes. Add turmeric powder, coriander powder, red chilly powder and 1 cup water and mix well. Cook for a minute or two. Add fried Arbi pieces, mix gently. Let it gets cooked on low heat for 3-5 minutes.





♨  Lastly add the garam masala and turn off the heat. Serve hot with chappati or rice.
