Shahi Tinda Curry



How to make Tinda Curry | Round Gourd Curry | Tinday Tamatar Curry Cooked in cashew nuts and poppy seeds gravy | Apple Gourd Cooked in Rich cashew nuts Tomato Gravy | Tinday Ki Sabzi


Today I am going to share yet another recipe made from Round Gourd. Thank you so much for loving and appreciating Lehsuni Tinda Masala Recipe.


Tinda - Tinday is also known as Indian Round Gourd, Indian Baby Pumpkin and Apple gourd. They are available for a very short period. In India these Round Gourds are available from summer to rainy season that is from May- September. Always pick Tinday which are small in size and have a smooth surface and not rough fibrous skin.. 



Tinda is an excellent seasonal vegetable and regarded as a super food for its numerous health benefits.



 It is very light and easily digestible vegetable. It is high in fiber and water content and works great on UTI problem and helps to excretes toxins from the kidney. It is also good for healthy glowing skin and strong beautiful hair.

♦Recipe details

♦Ingredients required 

⚫500 grams Tinday (apple gourd)

♦Grind to fine paste

⚫3 tomatoes, blanched
⚫10 cashew nuts
⚫1tsp poppy seeds - khus khus - soaked in ½ cup milk for 10-12 min
⚫1 tsp sesame seeds
⚫½ tsp black pepper 
⚫1 Kashmiri red chilly
⚫1tsp sugar
⚫2tsp curd
⚫15 grams butter

♦Other ingredients 

⚫1 green chilly
⚫1tsp cumin seeds
⚫½ tsp asafoetida powder
⚫1tsp red chilly powder
⚫1tsp turmeric powder 
⚫1tsp coriander powder
⚫Salt to taste




Method


♦Step 1 : mise en place

♨Wash and peel the tindas and cut them into medium cubes.


♨Blanch Tomatoes 


What is Blanching?
Blanching is a cooking technique in which food is briefly immersed in boiling water (for 3-5 minutes) And then placed under running water or plunged into iced water to halt the cooking process.





♨Grind :

Grind all the ingredients mentioned under "Grind to fine paste". Keep it aside until called for.



♦Step 2: Curry Preparation 

♨Heat oil in a pan, add cumin seeds and asafoetida, allow the cumin seeds to splutter. Add the fine paste. Cook for 5-7 minutes.


♨ Add turmeric powder, coriander powder, red chilly powder and salt to taste. Mix well and then and 3-4 cups of water. Allow it to boil then add tinda cubes. Cover with the lid and simmer for 10-12 minutes, keep stirring from time to time. Simmer them until they are completely cooked. Adjust curry consistency as per your taste. 






♨Switch off the gas stove. Garnish with chopped coriander leaves. Serve hot. Enjoy this scrumptious Shahi tinda curry with rotis or steamed rice.
