It is considered as an immunity booster and prepared using colostrum milk, sugar or jaggery and flavored with cardamom powder, nutmeg powder and saffron. Sharing recipe with step by step photos...

Kharvas is an Indian milk pudding made from unpasteurized colostrum milk. Colostrum is the pre milk fluid produced by all mammals during the first 48 hours after giving birth. This milk is slightly yellow in color and little thicker compared to our normal milk.  It is rich in proteins, carbs, lipids and loaded with  enormous health benefits.

From where to get this colostrum milk!
◾Well, this is available to your local milk vendor!  The only thing you need to check as and when available!

How to know which day colostrum milk we got!
◾This information is again provided by your milk vendor, as normally the first two - three days milk is used for making kharvas.



Whether regular milk is must in preparing!
◾No, regular milk is actually not needed. I have seen many recipes online which say add normal milk as well to make colostrum milk pudding. I just add very little water 15-20 ml to avoid getting hard as protein content is high in colostrum milk. If you've observed kharvas vendors, they keep this pudding in sugar syrup as help them to hold the moisture and avoid getting hard or rubbery texture.

I don't understand kharvas word, what is kharvas called in different languages?

◾I've  used sugar in today's recipe, but this can be cooked with jaggery as well..



Let's get started  - Recipe details 

  • Cooking method - Steaming 
  • Preparation time is approximately 5 minutes 
  • Cooking time 35-40 minutes
  • Cuisine Maharashtra - India 

Ingredients needed 

  • 1000 ml Colostrum Milk 
  • 15-20 ml water
  • 225-250 g  powdered sugar or add according to your taste
  • 1 tsp cardamom powder
  • Pinch of nutmeg powder
  • 15-20 saffron strands



Method 
✔️Step 1 - make powdered sugar

◾Add granulated sugar in a small blender or grinder jar. Blend it until very fine and powdered.





✔️Step 2 Sieve colostrum milk and mix all the ingredients
◾First sieve the colostrum milk to get rid of any impurities.
◾In a mixing bowl, combine colostrum milk, powdered sugar, cardamom powder, nutmeg powder, saffron and very little water.. Mix it all well..











✔️Step 3 Steam

◾Pour colostrum milk and sugar mix into a Thali/ tin or deep dish in which you're going to steam it. Steam for 35-40 or until well set.








✔️Step 4 Check

◾Insert knife to the colostrum mix, if it comes clean.. It means our dessert is nicely cooked.








✔️Step 5 Cool down -  Refrigerate and serve chilled 

◾Take the colostrum dish out and allow it cool down to room temperature. Sprinkle with a few drops of water. Refrigerate for 3-4 hours. Cut into desired shapes and serve chilled
