My Methi Pulao is a very thoughtful recipe. It is a perfect and healthy blend of rice, garlic, tomatoes, colorful vegetables and flavorful and aromatic fenugreek leaves and Indian spices.



🍃Hey, What's so special in your Methi Pulao recipe..

The special thing is a good use of Methi aka fenugreek leaves. Methi is a nature's provided shield to protect us in every winter season. As you all know Methi has a long history of use in Indian houses as vegetable, spice, herb and medicine. As per Ayurveda, Methi consumption in winter's results in stabilizing body temperature as it is known to produce warmth in our body. Fenugreek leaves are packed with vitamins, minerals and other nutrients which are very much needed for good health.

🍃Why to add boiling water in this Pulao recipe?

Whenever you're making Pulao and following absorption method, it is advisable to add boiling water after stir frying veggies and rice as this way you can avoid rice getting mushy as we're maintaining same temperature throughout this rice preparation. This technique is my creativity and it works great to prepare the perfect rice dish.

Let's get started - Recipe details 

  • Preparation time 10-15 minutes 
  • Cooking time 20-25 minutes 
  • Cuisine Indian
  • Servings 3-4

Ingredients needed

  • 1 cup basmati rice
  • 2 handfuls of fenugreek leaves
  • 1 cup assorted blanched vegetables (Added - peas, carrots, cauliflower and french beans.
  • 10-15 garlic cloves 
  • 3-4 tomatoes 
  • 4-5 green chillies or as preferred 
  • 2tbsp coconut milk powder
  • 1-2 tsp red chilli powder 
  • 1 tsp turmeric powder
  • 1-2 tsp garlic pickle or any available pickle in your kitchen (optional) 
  • 3-4 tbsp cooking oil


✔️Step 1 Mise en place 


◾Rice - wash - soak it for 15-20 minutes 



◾Fenugreek leaves - wash it thoroughly - pluck the leaves - discard the stems - roughly chopped.




◾Assorted vegetables - wash - peel - chopped - blanched.




◾Garlic - peel - finely chopped 





◾Tomatoes - finely chopped or make a coarse paste in mini chopper. 




✔️Step 2 Boil water 

◾The first thing to do is to boil required quantity of water in a saucepan. You'll need approximately 4-5 cups (but it also depends on the quality of rice used) 



✔️Step 3 Pulao Preparation 

◾Heat some oil in a fry pan. Add the garlic. Stir fry for 30-35 seconds until light gold.




◾Add tomato and green chilli paste and cook it on high flame for 5-7 minutes.








◾When oil starts separating, add fenugreek leaves. Stir fry for 2-3 minutes.


◾Add all the blanched assorted vegetables. Mix it all well. Stir fry again for a min or two.







◾Now add coconut milk powder, turmeric powder, red chilli powder, garlic pickle and salt to taste. Mix it all well.












◾Drain the water from rice. Add the rice. Stir fry again on slow flame for 2-3 minutes.





◾Add boiling water. First cook rice on high flame until 90 - 92% water evaporates.  Then remove rice pan from a gas stove for a while, you've to put a griddle pan on a gas stove and then place rice pan above it. Cover it with lid, cook it on slow fire till done. How to check - gently stir with back of rice spoon.








◾Serve hot with your preferred Raita, Pickle and Papad.
