How to make Rabdi |Yummilicious Popular Indian Dessert Recipe - Rabri 



Hello Friends, 

Let's talk about our popular Indian Dessert Recipe - Rabri. Rabdi aka Rabri is a north Indian very popular, super delicious sweet dish made with thickened milk and flavored with cardamom powder, saffron and dry fruits. 



This recipe is very easy to make, but needs patience and good execution. It is prepared by boiling milk on slow flame until it thickens and then scrapping milk from the sides of the pan. As you all know milk tend to overflow even on low heat and stick to the bottom.. Thus, you need to be very careful and attentive while preparing this recipe.


Today's recipe was not planned, it just happened. Due to no space in the milk compartment in the refrigerator, I had boiled milk for paneer preparation, but changed my mind at the last minute ... so stepwise pictures are not available for this recipe.. But will surely update very soon..

☑Recipe details 


▫Cooking time 65-70 minutes 
▫Method of cooking slow cooking
▫Type Sweets & Desserts 
▫Servings 2-3

☑Ingredients required 

▫1 liter Milk (I prefer Amul gold for this preparation) 
▫1-2 tsp cardamom powder
▫7-8 tsp sugar or as per preference
▫1 drop rose essence or as per preference
▫3-4 almonds
▫3-4 cashew nuts
▫3-4 pistachio nuts
▫few rose petals for garnish


☑Method


◾Boil milk in a wide heavy bottom pan over medium to high heat. 

◾When it starts boiling, reduce the heat and cook it on slow flame. Add sugar, mix it well.

◾When a layer of cream floats on the surface, shift that cream towards the side of the pan. 

◾Keep following the same process when another layer of cream is formed. 

◾Continue stirring at regular intervals to avoid sticking to the bottom.

◾When milk, reduced to ⅓ of original quantity, add cardamom powder.

◾Mix it very well. 

◾Scratch up the cream layers in the pan which was shifted to the side of the pan.Mix gently.

◾Finally add chopped nuts. Cook it on slow flame for a min or two.

◾Switch off the gas stove. Allow it to cool down. 

◾Remove it in serving bowls. Refrigerate for 2-3 hours. 



◾Garnish it with nuts and rose petals.  Serve chilled.

  5. Yes, actually i did the same.. Kept it in the freezer and served as Rabdi Kulfi.. it got finished in no time and asking me for second serving..:) Planning second batch very soon with malpua.

    2. Luckily my niece also visited that day.. and she was very much curious as why kulfi is served in these matkas ... I feel freezing kulfi in these earthenware gives awesome results.
