I'm back with one more Indo Chinese recipe.. This recipe was in my sharing list for many months... but was getting postponed for some reason or other. Finally decided to post today as I believe rainy season is the best season to enjoy fried snacks.
Veg Schezwan Fried Noodles Balls are very tempting, crispy, spicy and flavorful snack recipe which are made with noodles, veggies and spiced with Schezwan chutney. This is easy and quick snack which is prepared within 15-20 minutes. It is perfect tea time snack recipe.
The plan of action for this recipe is to cook instant noodles and then mix it with veggies, spices and sauces and make balls and deep fry them.

▫Preparation time 3-5 minutes
▫Cooking time 10-12 minutes

☑ Ingredients needed
▫70 grams Instant noodles ( Yippee noodles)
▫2tbsp chopped mix vegetables (cabbage, capsicum, carrots, onion, ginger, garlic,)
▫4-5 green chillies or as per preference
▫2tsp Schezwan sauce / chutney
▫½ tsp Ching's Secret Schezwan Masala powder
▫Salt to taste
▫1 egg white (optional)
▫1-2 tbsp cornflour
▫1-2 tbsp Maida (refined flour)
▫Touch of red, orange color
▫300 ml oil for deep frying
☑ Garnish and accompaniment
▫Grated cabbage, carrots and Schezwan Sauce.
✔Step 1 Mise en place
◾Boil 1½ cups water in saucepan. Break noodles in four parts and add them in boiling water. Cook for 2-3 minutes. Keep stirring in between. Drain off the extra water.Rinse them under running water to remove excess starch.. Keep it in the refrigerator until called for.
◾Vegetables - rinsed under running water - peeled and roughly chopped and then add all the vegetables mentioned above in a mini chopper and pulse for 10-12 seconds.
✔Step 2 Make a batter
◾In a mixing bowl, add noodles, vegetables, schezwan sauce, schezwan masala powder, corn flour, Maida, red, orange color, few drops of water and salt to taste. Mix it well and make a thick dough. This batter will be very sticky, so apply a few drops of oil on your palm and make lemon size balls. Keep these balls in refrigerator for 3-5 minutes.
✔Step 3 Deep Fry
◾Heat oil in a frypan , add 4-5 noodle balls and deep fry them on medium to high heat till cooked and golden. Take out and Serve hot with chilled grated cabbage, carrots and Schezwan sauce..
