Today's plan of action for this recipe is to prepare the rice by draining method. As you all know, this is most preferred method of cooking for fried rice, Pulav and Biryani and by following this method extra starch is easily removed, which makes rice perfect for this dish and then stir fry with mixed vegetables.

▫Preparation time 5-10 minutes
▫Rice Soaking time 10-15 minutes
▫Cooking time 12-15 minutes

☑ Ingredients required
▫150-180 grams rice
▫50-60 grams cabbage
▫2 medium size capsicum
▫1½ medium size carrots
▫1 small size onion
▫1 small piece ginger
▫5-7 garlic cloves
▫5-7 green chillies or as per taste
▫1 handful of chopped french beans
▫1 stalk spring onion
▫1-2 tbsp schezwan sauce
▫Pinch of Ching's secret schezwan fried rice masala powder
▫Salt to taste
▫1tbsp cooking oil
✔Step 1 - Mise en place
◾Rice - Soaked for 10-15 minutes - Cook rice by draining method.
☑How to go ahead:
◾Soak the rice for 15-20 minutes and then add the double quantity of water and prepare rice on high flame till 90 - 95% cooked and then transfer the rice into a colander and put it under running water to remove the starch and also halt the cooking process... You can extract complete water with the help of colander and keep them in the refrigerator and use as and when required. When cooked rice are kept in the refrigerator even for 15-20 minutes that make them best suited rice for any fried rice preparation.
◾Vegetables - Washed - peeled and roughly chopped and place all the vegetables mentioned above in a mini chopper and pulse for 10-12 seconds
✔Step 2 Final preparations
◾Heat 1-2 tbsp oil in pan. Add the chopped veggies and stir fry on medium to high flame for 2-3 minutes.
◾Now add a pinch of schezwan fried rice masala powder and salt to taste and again stir fry for a minute or two.
◾Add cooked rice and Schezwan sauce to the veggies. Mix it well and stir fry again for a minute or two. Your Schezwan Fried rice is ready to dish out. Garnish with some spring onions and serve hot.
