Raspberry & Mango Layered Jelly with China Grass Pudding

I am so excited to share this recipe. This recipe has been planned for many months.



I just needed to make something fun and colorful for my niece and make her super excited!



Children love colorful sweets and desserts. This recipe will going to be super duper hit dessert for birthdays and kitty parties, if planned in advance.


Raspberry and Mango layered Jelly with Vanilla Flavored China grass Pudding is very easy to make fun recipe, but this needs good planning and execution. It needs your good time and efforts.



◾ Let's start with recipe details 

⚫Course: Dessert
⚫Time : 120 - 180 minutes 
⚫Category: Vegetarian 
⚫Difficulty: easy
⚫Serving: 4-5



◾Ingredients required for Raspberry and  Mango layered Jelly with Vanilla Flavored China grass Pudding 



♦For bottom layer - China Grass Pudding 


⚫500 ml milk
⚫5 grams china grass (agar agar) 
⚫2 drops of Vanilla   essence 
⚫50grams sugar (app 5-6tsp)


♦For Middle layer - Mango jelly


⚫2 Mangoes  - pureed 
⚫25 grams sugar
⚫5grams  china grass or gelatin 
⚫½cup mango juice

♦For top layer - Raspberry Jelly

⚫100 grams Raspberry jelly crystals (jelly pack)
⚫500 ml water



☑Method 


♦Step 1 : Bottom layer - China grass Pudding 


♨ Soak china grass in 50 ml warm water for 15 - 20 minutes. 




♨ Place milk in a deep bottomed nonstick milk pan and boil the milk. Once the milk begins to boil, reduce the gas flame, add sugar and simmer, cook for 10-15 minutes. Continue stirring in between. Get another pan and boil china grass in half cup water for 2-3 minutes, when china grass looks completely dissolved , transfer this to milk pan. Mix well, add vanilla essence, cook for 2-3 minutes. Cook till milk thickens, but remember it should have smooth dropping consistency. Switch off the gas stove at this point. Allow it cool down slightly, but don't allow the mixture to set in milk pot. Just keep on stirring.. Pour into little glass and allow it to set.




♦Middle layer - Mango chinagrass jelly 



♨Boil china grass in half cup water for 2-3 minutes, add sugar and mango juice when china grass looks completely dissolved add start becoming gelatinous. Switch off the gas stove , add mango puree. Keep stirring  blend it well. Remember, it should have smooth dropping consistency. Pour this mixture in china grass layered glass and allow it to set.



♦Top layer - Raspberry Jelly



♨Prepare jelly as per instructions given on the pack or follow this way. .For 100 grams jelly crystals, you need  500 ml water. 250 ml of water will be added in jelly crystals to dissolve and 250 ml of water will be boiled for cooking. Mix jelly mix into a bowl properly. Dissolve the crystals of the jelly pack in 250ml normal tap water. Boil 250 ml of water, add the dissolved jelly mix. Stir and boil it for a minute or two.. Allow it to cool down a little. Pour this mixture in layered glass and allow it to set....









♨Refrigerate it until firm without disturbing. Serve it chilled. .

✏ About China grass 


China grass - Agar / Agar agar is a vegetarian gelatinous substance derived from a plant which has highest gelling properties. It is a good vegetarian alternative to gelatine, and can be used in the same way. It is primarily used to bind liquids. It is extracted by boiling a kind of algae. The word "agar" comes from agar-agar, the Malay name for the algae (Gigartina, Gracilaria) From which jelly is produced. .


 China Grass is also known as Japanese isinglass, kanten, Agar Agar, Falooda, Japanese Moss, Ceylon Moss and Bengal Isinglass. This is mainly used as an ingredient in desserts throughout Asia. .
