◾RECIPE DETAILS:

  • Category: Vegetarian
  • Course: Snacks and Appetizers
  • Cuisine: Indian
  • Technique: Frying
  • Prep Time: 5-7 min
  • Cook Time: 15-20 min
  • Difficulty: Easy
  • Serving: 2

◾Ingredients required for Kacche Aam Ke Pakore (Raw Mango Fritters)

♦100g Besan (Gram flour)
♦1tbsp corn flour powder
♦1 medium size Raw Mango
♦1 tbsp cilantro leaves
♦1/2 tsp Ajwain
♦3 green chillies
♦1 tsp red chilly powder
♦A  pinch of baking soda
♦Salt to taste
♦120 ml Cooking oil for frying

◾Cooking instructions:-

✔Step 1 Mise en place (Slicing)

♨ Peel and thinly slice the mangoes. Sprinkle red chilly powder and salt to taste. Keep aside until called for..

✔Step 2 Batter Preparation

♨ In a mixing bowl, add besan, corn flour, green chillies, ajwain, red chilly powder, cilantro leaves, cooking soda and salt to taste. Mix well, slowly stir in enough water until the mixture reaches the smooth and lumps free batter consistency which comes coated on thin mango slices. Whisk the batter well and keep aside until called for.

✔Step 3 Frying

♨Heat oil in a heavy bottomed deep frying pan. Check the oil temperature by dripping a drop into the batter - if it floats to the surface quickly - the oil is ready for frying. Coat the raw mango slices into the batter and drop it in the oil carefully. Add one by one as many fits in the pan. Don't overcrowd them in the pan. Deep fry them on both sides until crispy. Fry them in batches. Take them out onto a paper towel layered plate.

✔Step 4 Serve

♨Serve it hot, straight from the pan to the platter with green chutney and tomato sauce.
