I'm back with one more street food recipe for you. It is one of the popular street food of Mumbai. Sharing recipe with step by step photos.



Tawa Pulao is a quintessential Mumbai street food. As the name suggests, it is made on the flat, jumbo griddle pan used for Pav bhaji.. This Pulao is mainly available with Pav bhaji vendors.. 



I've made this pulao on tawa that too clay tawa.☺️ It was gifted to me by my sister. Initially, I was hesitant to cook pulao on this as it is very fragile in nature, and more so was not sure whether able to complete the task or not.. 🤔 But then decided to give it a try, and I'm very happy and satisfied with the end product as pulao tasted awesomely delicious.👏💃👌

Whether, we need food color for this pulao recipe?

No, absolutely not. I do agree street vendor add food color to this pulao, but it can be completely skipped.


So, how to get beautiful, tempting color!

It's actually very simple.. 

First - you need to stir fry onions till light golden brown. 

Second - addition of turmeric as well as Kashmiri red Chilli powder.


Can we use left over rice for this recipe?

Yes, of course you can go ahead with left over rice. In fact, it is said - day-old plain rice are best suited for this pulao preparation. As freshly cooked rice are hot, moist and sticky and due to this it may result in a clumpy and soggy pulao. 




Whether this pulao is very spicy?

Yes, this Pulao is actually very, very spicy, but you can adjust and add chillies according to your preference.


Which is the best suited cookware for this pulao?

As the name suggests, best suited cookware for this pulao is tawa, but if you're not comfortable on tawa, use a large frying pan. 


Which veggies are the must to have in this recipe and can't be skipped!

I believe all the vegetables shared in today's recipe are equally important. But the addition of tomatoes and capsicum in good quantity is very much needed and can never be skipped as affect the taste of this pulao.



Which Pav bhaji masala is best suited for this recipe?

I think that's up to you, add according to your taste and preferences. My preferred pav bhaji masala brands are Everest and Badshah.

Yes, use of butter + cooking oil works great in this pulao recipe. 

Second - Be careful with addition of salt. 


Which accompaniment is best with this pulao!

Well, it depends on your taste.. But onion tomato cucumber raita is perfect for this recipe and it should be slightly chilled as well.. 



Let's get started - Recipe details 

  • Preparation time 10-15 minutes 
  • Cooking time 15-20 minutes 
  • Servings 2-3

Ingredients needed 

  • 1 cup rice 
  • 1 onion
  • 1 tsp ginger garlic paste
  • 3-4 Tomatoes 
  • 2 capsicum
  • 2 carrots
  • 10-12 french beans
  • Handful of frozen peas
  • 3-4 tsp pav bhaji masala powder
  • 2 tsp Kashmiri red chilli powder
  • 1 tsp turmeric
  • Salt to taste 
  • 1-2 tsp lemon juice (optional)
  • Cooking oil & buttter
  • Coriander leaves for garnish 

Method 

Step 1 mise en place 

✔️1 large Onion, roughly chopped 

✔️Tomatoes - finely chopped 

✔️Carrots - peeled - cut into small cubes

✔️French Beans - cut into small cubes

✔️Capsicum - cut into small cubes

✔️Green chillies - roughly chopped. 

✔️Ginger garlic - fine paste

✔️Rice - wash - soak it for 15-20 minutes - drain the water - Keep it aside until needed.




Step 2 cook rice by draining method

◾Boil about 4 cups of water in a saucepan. Add soaked rice and salt. Cook it on high flame for approximately 12-15 minutes until rice are 85% cooked. Drain the water - transfer the rice into a colander - keep it aside until called for.








Step 3 Final Step - Tawa pulao preparation..

◾Heat the oil & butter on a tawa over medium high heat. Add the onions.. Cook it on high heat for about 2 minutes. Add ginger garlic paste and green chillies. Stir fry on high flame until light golden. 





◾Add all the veggies and the chopped tomatoes. Cook it for 3-5 minutes. 






◾Add pav bhaji masala powder, red chilli powder, turmeric powder and salt to taste.. Stir fry cook again for 3-5 minutes. Mash it with Pav bhaji masher. 









◾Add the cooked rice. Toss it up well! Cook it again for 2-3 minutes..






◾Lastly sprinkle lemon juice, garnish it with coriander leaves. Serve hot with your favorite Raita.
