I am back with one more summer special curry recipe for you. Sharing Moringa Pods & Potato Curry Recipe with step by step photos.

Today's recipe is dedicated to my dear mom as the source of inspiration for this recipe is her immense liking for South Indian coconut based curries..

Drumsticks, Potato and Raw Green Mangoes in homemade coconut milk is a very delicious, healthy, flavorful recipe of Drumsticks. This recipe is best suited for this summer season. Trust me, you'll get addicted to this preparation, once you give it a try. 

The plan of action for today's recipe is:-

✔Extract milk from fresh coconut. 

✔Boil the drumsticks and reserve the broth

✔Make a fine paste of shallots, curry leaves, raw mangoes and coconut

✔And then mix all the ingredients together and cook till done.

☑Recipe details

🔹Preparation time 25-30 minutes
🔹Cooking time 15-20 minutes
🔹Serving 3-4
🔹 Cuisine - Indian

☑Ingredients required

🔸 3-4 Drumsticks
🔸2-3 medium boiled potatoes
🔸3-4 shallots or
🔸2 small onions
🔸1/2 cup fresh thick coconut milk first extract
🔸1 cup thin coconut milk second extract
🔸½ green raw mango or as per taste
🔸⅓ tsp mustard seeds
🔸2 tsp coconut oil
🔸1tbsp coconut milk powder (optional)

☑For coconut mango paste

🔹2-3 shallots or 1 small onion
🔹3-4 sliced raw mango
🔹1 small piece coconut
🔹2-3 green chillies or as per taste
🔹8-10 curry leaves
🔹1 tsp cumin seeds
🔹4-5 tbsp coconut milk


♨ Step 1 Mise en place

Drumsticks - peeled and cut into 2" slices. Combine 150 to 200 ml water, drumsticks and ½ tsp salt in a saucepan. Cover it with lid and cook it for 5-7 minutes until Drumsticks are 80-85 % cooked. Don't throw the broth in which drumsticks are cooked. Keep it aside until called for.

Potatoes - boiled - peeled - cut into small cubes.

Onions - peeled and sliced

♨ Step 2 : Extract coconut milk

◾Coconut -  - Soak coconut slices in 100ml lukewarm water for 10-12 minutes. Put coconut slices and water in the blender or mixer grinder jar. Blend it on high speed for 3-4 minutes until thick and creamy. Pour through a fine sieve or cheesecloth. This is the first extract of coconut milk. Now put back strained out coconut residue and 100ml water and repeat. We need first and the second extract of milk for this recipe.

♨ Step 2 Prepare coconut mango paste

Ingredients - shallots, raw mango slices, curry leaves, green chillies, coconut pieces, cumin seeds and a few drops of coconut milk or water.
◾Combine all the ingredients mentioned above in a blender or in a mixer grinder jar and prepare a fine paste. Keep it aside until called for.

☑Step 3 Cooking time

◾Heat coconut oil in a saucepan over medium heat. Add mustard seeds and allow it to splutter. 

◾Add coconut raw mango paste. Stir fry for about a minute or two. Add turmeric powder, red chilly powder and salt to taste.

◾Add Drumstick broth and the thin extract of coconut milk. Mix it all well.

◾ Slow the flame, add all the vegetables i.e. potatoes, shallots, raw mango slices and drumsticks. Cover it with lid and cook it on slow flame for 5-10 minutes until all vegetables are nicely cooked. Switch off the gas stove. 

◾Lastly add thick coconut milk extract and mix it well. Adjust gravy consistency according to your taste. If needed you can also add 1-2 tsp coconut milk powder to make it more creamy and thick. Serve it hot with steamed rice.
