I'm back with one more yummilicious and lip-smacking recipe of mango for this season. Sharing super quick and very delicious mango chunda recipe with step by step photos.



What to cook in the summer season is one of the most difficult and challenging job for all of us and on the top of it kuch bhi acha nahin lagta is the most common and repetitive words in every Indian house in this season.. 




In every summer season this Chunda recipe works as a blessing in disguise for me.. It is super quick, very delicious, versatile and addictive in taste.. It is hot and spicy, it is sweet and sour and the best thing about Chunda is that it goes very well with any kind of Indian food or snack.



Chunda aka chundu is a classic Gujarati dish. This dish is made with raw Mangoes. Rajapuri and ladwa Mangoes are best suited for the Chunda preparation as these types of Mangoes help you to preserve this dish for a long period of time.




Today I'm going to share instant version of this recipe which is completely different from the authentic Chunda recipe. The traditional classic chunda recipe is cooked with heat from the sun. It's like combining all the ingredients together in the pickle jars and place these pickle jars in sunlight for 8-10 days till the sugar melts completely and turns into nice thick sugar syrup.




Today's recipe is a very small batch as made with regular available mangoes. Usually I wait for Rajapuri mangoes or prepare this dish with the green Totapuri mangoes as they are less sour in taste, means less consumption of sugar and the best part my family loves it...



Let's get started 

☑Recipe details 

🔹Preparation time 15-20 minutes 
🔹Cooking time 10-12 minutes 
🔹Type accompaniment 
🔹Cuisine Gujarati - India 


☑Ingredients required 

✅1 cup grated mangoes 
✅1 cup sugar
✅½ cup water
✅1 tsp salt
✅⅓ tsp turmeric powder
✅2-3 tbsp red chilly powder or as per taste
✅2-3 tsp lemon juice 
✅1tsp freshly roasted & ground cumin seeds.


Method

♨ Step 1 Miss en place 

Mangoes - Wash - pat dry - peel and grated.





♨ Step 2 Mix salt and turmeric powder

◾Combine grated Mangoes, salt and turmeric powder. Mix it all well. Keep it aside for 5-10 minutes.




♨ Step 3 Cooking time

◾Combine water and sugar in a medium saucepan. Allow it to boil and cook till sugar reaches one thread consistency. Add lemon juice as it helps to avoid crystal formation in sugar.






◾Add grated Mangoes. Cook it on slow flame for 3-5 minutes.





◾Add red chilly powder, mix it well. Cook it for 3-5 minutes or until syrup thickens.




◾Switch off the gas stove.




◾Lastly add freshly roasted and ground cumin seeds powder.




◾Leave it to cool down completely. Store it in a covered sterilized glass jar and refrigerate.
