Spicy Stir Fried Cabbage In Onion Tomato Gravy

Hello Friends,

Today's blog post in very unusual and interesting recipe of stir fried cabbage in spicy onion tomato based gravy. Sharing recipe with step by step images in GIF format.



We call this type of preparation as Seyal Bhaji. Seyal means any vegetarian or non vegetarian dish which is prepared with onion or garlic as an essential ingredient and it is cooked with very little or no water. And onion / garlic is added in very good quantity compared to the base vegetable.

☑Recipe details 

▫Preparation time 5-7 minutes 
▫Cooking time 12-15 minutes 
▫Serving 3-4 


☑Ingredients required 

▫2 Baby cabbages 
▫6-7 Onions
▫2-3 Tomatoes 
▫3-4 green chillies 
▫1 inch piece ginger
▫1 tsp garam masala powder
▫2-3 tsp red chilli powder 
▫1 tsp turmeric powder
▫3-4 tsp coriander powder
▫salt to taste
▫2-3 tbsp cooking oil
▫Few coriander leaves for garnish 


☑Method
✔Step 1 Mise en place - vegetable cutting 




◾Cabbage - cut into quarters
◾Onions - roughly chopped 
◾Tomatoes - roughly chopped 
◾Green chillies - roughly chopped 
◾Ginger - peeled and roughly chopped 




✔Step 2 Stir frying of cabbage

◾Heat oil in a wide saucepan, add cabbage and stir fry for about 3-5 minutes on medium to high flame. Cook cabbage according to your taste.





Note: If you prefer crunchy cabbage, then don't cook it for very long, don't cover the pan and prepare it on medium to high flame for 3-5 minutes, whereas if you prefer nicely cooked soft cabbage, then first minute or two cook it on medium to high flame and then cover it with lid and cook it for 5-7 minutes.. Don't forget to flip in between... cook until the color changes to light brown, sprinkle red chilli powder, coriander powder and a pinch of salt. Keep it aside until called for.


✔Step 3 Gravy Preparation 

◾Heat oil in a heavy bottom fry pan. Add onions, stir fry on medium high flame until onions are nicely cooked and color changes to light golden brown. 

◾Add tomatoes, ginger and green chillies First 2 minutes cook it on high flame, keep stirring in between and then cover it with lid and cook it for 3-5 minutes until soft. 

◾Add dry ingredients i.e. red chilly powder, turmeric powder, coriander powder and salt to taste... Mix it well and saute again for a minute or two... Add ⅓ cup water. 

◾Now add garam masala powder and mix it well. Place the stir fried cabbage pieces over the top and cover it with lid and cook for a minute or two... 





◾Our Sabzi is ready to dish out... At the time of serving, remove the stir fried cabbage in a plate first, then transfer gravy in serving bowl, top it with stir fried cabbage, sprinkle coriander leaves... Serve it hot..
