I'm back with one more recipe of stir fried bitter gourd curry.. Sharing recipe with  step by step images in GIF format..


Have you ever seen someone licking fingers while eating bitter gourd curry.. Well... you'll love to do the same, when you try my this recipe.. Created awesomely delicious recipe of bitter gourd curry which is a blockbuster super duper hit in my house. 


As you all know I love to play with the ingredients and keep exploring to make the not so desirable food to the most desirable one. Right away, after this recipe - now Karela is added twice a week in our menu card.. I was very much surprised and became super excited ... as never ever expected it will going to be super duper hit and so much loved. Seriously, we all were literally licking our fingers and fall short of this vegetable and decided... next time will surely going to prepare this in good quantity.. 


I strongly believe if you love to eat lots of sweets and desserts, then you must add this recipe in your weekly diet... And the selling point of this recipe is that it not only good in taste but makes you look awesome. 


Did you know that Karela is not a vegetable, but actually a fruit...... Yes, you got word it right.. Bitter Gourd is also called as beauty gourd. . This works as an excellent skin cleanser, detoxifier, and blood purifier fruit. This is also beneficial for diabetic patients and capable of killing cancer cells...


You want to know the secret ingredients of this recipe or what made this curry so delicious .. Well the answer is...... the secret ingredients are Cardamom Powder and Tomato Sauce... Both the ingredients blend so well in this tomato based bitter gourd curry... it feels that they are actually made for each other... Earlier I always use to add 1 tsp sugar in tomato based curry for perfect taste and to control the tangy taste of tomatoes.. But this time sugar got replaced with tomato sauce and it actually worked awesomely in this recipe.



The plan of action for today's recipe is to blanch and stir fry bitter gourds and then cook them in cardamom flavored tomato based curry.

Recipe details 
⚫Cuisine: Indian

☑Ingredients required 


⚫400 grams Karela 
⚫3 medium size tomatoes 
⚫1tsp cumin seeds 
⚫1-2 tbsp tomato ketchup or quantity as per taste
⚫1-2 green chilies or as per taste
⚫1-2 tsp cardamom powder
⚫2tsp red chilly powder
⚫1 tsp turmeric powder
⚫Salt to taste
⚫3-4 tbsp cooking oil for stir frying and cooking
⚫Coriander leaves for garnish



Method✔Step 1 Mise en place

Karela - Wash and trim the ends - scrape the rugged surface - slit lengthwise - remove hard seeds (if any) - Simmer it for 8-10 minutes until 80-90% cooked - allow to cool down - squeeze and remove water from the cooked bitter gourd - and finally stir fry or shallow fry.. Keep it aside until called for..



Tomatoes and green chilies : Washed - sliced - add chopped green chilies and tomatoes in a mixer grinder jar and make a puree



✔Step 2 Cooking time


◾Heat oil in a fry pan. Add cumin seeds and allow it to splutter

◾Add tomato puree, cook it for 2-3 minutes. 

◾Add turmeric powder, chilly powder and salt to taste.. Mix it all well..

◾Add 2-3 cups of water and allow it to boil

◾Add stir fried bitter gourds, tomato sauce and cardamom powder and mix it well..

◾Cover it with lid, simmer and cook it for 3-5 minutes until the bitter gourds are nicely cooked. Adjust curry consistency as per your taste. 




◾Serve hot, garnished with fresh coriander leaves.

  2. Wonderful dish. The initial boiling and tomato gravy offset the bitterness so as even the kids can be made to eat this vegetable. With growing craving for chocolates, pastries and ice-cream, this vegetable is must eat atleast once in a week. So the recipe shared by you help me making eat everyone in my family.
