Thandai Matka Kulfi - Holi Special




How to make Thandai Matka Kulfi | Authentic Recipe of matka kulfi with stepwise photos

Thandai matka kulfi is super cool, rich, creamy lip smacking frozen dairy dessert from Indian Subcontinent which is flavored with thandai masala powder and set and served in small earthenware i.e terracotta pots. 



Matka is Hindi word used for an earthen pot. It has been in use for water storage from ancient times and this trend is still continuing in almost every Indian house.



Thandai Kulfi is the best way to celebrate the festival of colors. It is very delicious, divine in taste and you'll love to prepare this kulfi again and again. 




I'm going to follow an authentic recipe for this thandai matka kulfi as truly believe no gain without pain. I agree this is a lengthy process, but believe me, the end product is awesome, satisfying and divine in taste.


The action plan for this thandai Kulfi is as follows 

✔Preparing Thandai masala powder

✔Soaking thandai powder and then straining 

✔Reducing milk to half of original quantity and then adding sugar 

✔Addition of cornflour and milk powder

✔Finally mixing soaked and sieved thandai powder and leave to set.

☑ Recipe details


⚫Milk reducing time 45-50 min
⚫Preparation time 15-20 min
⚫Cooking time 5-10 min
⚫Yield - if using matka moulds, then 5-6 and if using kulfi moulds then 7-8 kulfis 

⚫Kulfi Set time 12-15 hours

☑ Ingredients required 

⚫1000 ml milk
⚫30 - 40 grams thandai powder mix + ½ cup milk 
⚫1-2 tbsp cornflour
⚫150-200 grams sugar
⚫50-80 grams milk powder
⚫5-6 drops rose essence 
⚫nuts and edible rose petals for garnish


☑Method
✔Step 1 Prepare Thandai Masala Powder 


For thandai mix - ingredients - to be ground to fine powder 

⚫1tbsp almonds 
⚫1tbsp charmagaz - melon seeds
⚫1tbsp roasted Makhana - chestnuts
⚫1 tbsp walnuts
⚫4 green cardamom
⚫1tsp poppy seeds
⚫½ tsp fennel seeds
⚫½tsp black peppercorns
⚫Pinch of nutmeg and cinnamon powder.


◾Take a dry mixer grinder jar, combine all the ingredients and grind to fine powder. 


✔Step 2 Processing of Thandai Masala Powder

◾Soaking and Sieving of thandai masala powder- In a mixing bowl, combine ⅓ cup water and ½ cup milk and thandai masala powder.Soak this for 2-3 hours and then sieve this and keep it aside until called for.

✔Step 3: Milk processing 

◾I'm going to grease my milk saucepan first as this is the best way to avoid milk sticking to the bottom. To grease a pan, use ghee or butter. With the help of pastry brush, apply a thin layer of ghee into the pan.





◾Boil milk in a greased heavy bottomed or non stick pan and cook on slow flame until it reduces to half of the original quantity. Add sugar and cook again for 5 to10 minutes.





◾Now dissolve cornflour powder and milk powder in half cup water and mix it with the thickened milk.. Continue stirring and cook until mix thickness and cake batter consistency is formed. Take good care as chances of sticking to the bottom is very high if left unattended or cooked on high flame for longer time it will get burnt.








◾Switch off of the gas stove and allow the milk to reach room temperature and then add thandai paste, as playing very safe to avoid milk to cuddle. Finally, add a few drops of rose essence, now mix it well.


✔Step 4 Allow it to set

◾Pour this thickened milk into small terracotta pots or kulfi moulds and place it in the freezer and allow it to set for 12 to 15 hours..





✔Step 5 How to serve

◾Garnish it with nuts and rose petals and serve.
