Today I'm going to share recipe of one more winter special vegetable - Kohlrabi. Sharing Kohlrabi Spring Garlic Tomato Curry with step by step photos.
Kohlrabi is a winter crop and a staple vegetable of the northern region of India and It is a commonly eaten vegetable in the German speaking countries. Kohlrabi is a member of the Brassicacea family - the same family of cabbage, lettuce, collards, cauliflower, broccoli and Brussels sprouts. The common names of kohlrabi are German Turnip, cabbage, turnip, Knol-knol, Ganth Gobhi (गांठ गोभी), ganthi Kobi, The taste of kohlrabi is said to be similar to broccoli stem but milder and sweeter. But I've felt that the kohlrabi in raw form taste resembles to daikon radish (Mooli) And after cooking you get the feel of turnip (Shalgam).
Kohlrabi is a versatile vegetable. You can eat them raw as well as cooked. You can also boil, steam, bake, grill or roast them. Choose kohlrabi bulb which is free from cracks and leaves are un blemished. The kohlrabi bulb skin is real hard and beneath the hard thick skin of the bulb is another fibrous layer that should also be peeled before cooking. You've to peel the skin until you reach the light layer of crisp flesh.
Kohlrabi is a good source of fiber, potassium, vitamin C and Vitamin B6.

☑ Ingredients required
⚫600 grams /2 bulbs of kohlrabi
⚫4-5 tomatoes (puree)
⚫1 handful of spring garlic stalks and bulbs
⚫2tsp cumin seeds
⚫⅓sp asafoetida (hing)
⚫1-2 green chillies
⚫2tsp cumin seeds

⚫1 small piece ginger
⚫5-6 curry leaves
⚫2tsp Red chilly powder
⚫1tspTurmeric powder
⚫1tsp sugar
⚫1 tsp cooking oil
⚫Salt to taste
☑ Method
♨ Step 1 Mise en place
♦Kohlrabi - washed, peeled and roughly chopped
♦Tomatoes Washed and make a puree by adding ¼ cup water if needed
♦Spring garlic - peeled and roughly chopped
♦Ginger washed, peeled roughly chopped
♦Green chillies washed, and roughly chopped
♨ Step 2 cooking time
♦ Heat oil in a pressure cooker on medium heat, add cumin seeds and asafoetida, saute it till you get nice aroma and when cumin seeds starts crackling add curry leaves and kohlrabi and cook for 5-7 minutes on slow to medium fire.
♦ Add tomato puree, green chillies, spring garlic, red chilly powder, turmeric powder and salt to taste. Mix it very well. Saute again for 2-3 minutes.
♦Add 4-5 cups of water or add according to consistency you need in this preparation. Pass over the pressure cooker with lid and cook up to 4-5 whistles, then slow the flame and simmer for a minute or two or cook till done..
♦Serve hot with rice or chappati.
