Lehsuni Tendli - Ivy Gourd Masala Stir Fry



How to make Tindora Sabzi, Ivy Gourd Stir Fry, Tendli Stir Fry, Lehsuni Sukhi Tendli Sabzi, Sukhi Tendli Bhaji 


Sharing step by step recipe of Ivy gourd which are stir fried and cooked in garlic, cilantro leaves and tomato based gravy.


Lehsuni Tendli Masala Stir Fry is very yummy, healthy and easy recipe of Ivy gourd which are shallow fried and cooked in garlic tomato gravy. This recipe again tried and tested recipe from my kitchen and comes under fast to cook, good to eat healthy and scrumptious recipes.


Ivy gourd (Coccinia indica) Is also known as Tendli, Tondli, Tindora, Kunduri, Kundru, Kovakkai, Kovai, Kovakkai, Dondakaya Gherkin, Gentleman's Toe, Kovakka, Baby Watermelons and Little Gourd. Coccinia indica is a tropical plant that is actually an exotic vine and member of pumpkin family and is an aggressive climber that can spread quickly over trees, shrubs, fences and other supports.


Tendli is good for diabetes as helping in controlling blood sugar levels. It is rich in fiber, which aids in digestion, prevents constipation and very good sources of beta-carotene, vitamin C and protein.


The garlic, tomato combination works great with ivy gourd. Trust me, after this recipe you will forget all other preparation of ivy gourd.

☑ Ingredient required ⬇

400 g Tendli - Ivy gourd 
3 Tomatoes
8-10 Garlic cloves
10 gram ginger
5-6 curry leaves 
2 Green chillies
1tsp turmeric powder
3tsp coriander powder 
2tsp red chilly powder
30 ml cooking oil for shallow fry and cooking 
Salt to taste
Coriander leaves for garnish



✔Method:⬇


☑ Step 1 Mise en place - Vegetable chopping 


Ivy gourd - washed - pat dry - cut into halves 
Tomatoes - washed - finely chopped
Ginger washed, skinned and chopped 
Garlic - peeled and chopped 
Green chillies - finely chopped 



☑ Step 2 : Shallow Frying 


Heat cooking oil in a fry pan, add ivy gourd. Shallow fry them on high flame for approximately 6-7 minutes. Remove it from the heat. Keep it away until called for.




☑ Step 3 - Gravy preparation 


Heat 1tsp cooking oil in a pan, add chopped ginger, garlic , sauté them on medium flame until a slight change in color for approximately 30-35 seconds. Add tomatoes, curry leaves and green chillies. Cook it on high flame for approximately 5-7 minutes, until oil separates. Add turmeric powder, red chilly powder, coriander powder and salt to taste. Mix well 




Now add shallow fried Ivy gourd and ½ cup water. Cover it with a lid and simmer for 1-2 minutes. Switch off the gas stove.



Serve hot garnished with chopped fresh coriander leaves.


 



Notes:

✔Please note, to retain the crunch in ivy gourd, don't cook it for long. If preferred well cooked and soft ivy gourd, then instead of ½ cup, add 1 cup of water and cook for a longer period for approximately 5-7 minutes.
