How to make eggplant fry | Quick recipe of Fried Aubergine


Sharing super quick and delectable recipe of brinjals which are fried and flavored with a delicious mix of Indian spice's to give a unique and spicy taste. This is one of the best and excellent recipe for brinjal lovers. If you are a brinjal lover and not yet cooked brinjal this way, you've missed it something very delicious till today... 


Brinjal is also known as baingan, eggplant or Aubergine. Brinjals are a rich source of fibre and low in soluble carbohydrates and beneficial for regulation of blood sugar levels and also controls the absorption of glucose. This makes them the best choice for people suffering from type 2 diabetes.





My today's Baingan Masala Fry is very simple, quick and very tasty side dish recipe which goes well with dal rice or even with chappati. If any one is a great fan of brinjal he/she will surely love this recipe. Frankly speaking, I'm not a big fan of brinjal and don't have any inclination to eat, but this recipe even tempt me to at least taste...



Brinjal Fry is my mom's one of the most favorite dishes. I've witnessed many people, who go crazy for this brinjal preparation, this is a must try recipe for brinjal lovers.

⚫Prep time - 5 min
⚫Cook time - 10-12 min
⚫Cuisine - Indian

☑ Ingredients required ⬇


⚫500 grams brinjal (eggplant / Aubergine)
⚫3tbsp coriander powder
⚫3tsp red chilly powder
⚫⅓ tsp turmeric powder
⚫1 tsp dry mango powder
⚫2tsp sesame seeds
⚫Salt to taste
⚫Cooking oil for frying





Method ⬇


☑ Step 1 Mise en place 


♨Wash and pat dry the brinjals with clean kitchen cloth. Remove the stems and discard. Cut them lengthwise into quarters. Give criss cross lines for faster and even cooking, but make sure you don’t run deep to cut it off! Please note brinjals cutting work needs to be performed after placing cooking oil for deep frying as an oxidation process start very fast in brinjals so don't cut it up too far ahead of cooking, and more so keeping them in water will result is brinjal turning soggy and unpalatable..




♨ Now, take above mentioned dry ingredients in a plate. Mix all well, Keep it aside until called for. .




☑ Step 2 - Cooking time


♨ Heat oil in a deep frying pan, fry baingan on both sides on high flame for 5-6 minutes and a minute or two on slow flame till turn crisp and golden brown.. Drain excess oil. Keep it aside.




♨ Now, take above mentioned mixed dry ingredients, coat this masala nicely over the fried brinjals. Put them back in the fry pan, if needed, add a tsp of cooking oil, toss them and then cook it on a slow flame covering lid for a min or two.




♨ Serve hot..
