I am back in business. Things don't always go as planned, however.. I wanted to make the best use of light available in this month as considered best for food photography. But this scorching heat has given full stop to all the recipes planned for this month ...


May month is very special to me as mothers day is celebrated this month, followed by my birthday. May month also means summer vacation here in India and as said this is the happiest and most memorable period in a student's life... 

The truly priceless Moments are those spent with family and friends. 


My today's recipe of Malai kulfi is an all time favorite, perfect summer treat for children and adults Let's Learn how to make Malai Kulfi.

◾INGREDIENTS REQUIRED FOR  Malai Kulfi 


♦1000ml Milk

♦1tbsp Condensed Milk

♦ 3tbsp Fresh milk cream

♦1 drop Rose essence (optional)

♦1tsp cardamom powder

♦1tbsp Cornflour

♦150 -200 g Sugar ( or as per taste)

Method


◾Boil milk in a nonstick or heavy bottomed pan over medium heat .

◾Once the milk begins to boil, reduce the heat, allow it to simmer for 35-40 minutes. Continue stirring in between to avoid scorching.

◾Add sugar, condensed milk,  cornstarch dissolved in water and cardamom powder. We have to boil the milk till reached half the volume. The milk will hit a light pink color

◾Switch off the gas stove Add cream and rose essence, mix well and allow the mixture to cool completely.

◾Now pour the mixture in the kulfi molds and Leave to set for 8-10 hours in the freezer till they become solid.

◾Remove the kulfi molds from the freezer. Let the molds to remain outside the refrigerator for 5 minutes. Unmold, Serve immediately .

  1. Wow! Belated Happy Birthday to you.Your niece is so sweet! :) Even my 15 year old niece's name is Anushka ! ;) Indian summer is indeed way too hot and humid! Chill with your niece and have lots of fun! :)
    And this kulfi looks so refreshing Deepa! I would love to have these kulfis, even though it's not summer here yet! :)

      Whether you've reduced the milk and whether added corn flour in it. I hope no pblm in the refrigerator!
