Kand Aur Palak Ki Sabzi (Purple Yam And Spinach Mix Veg Masala)

Today I'm sharing yet another Interesting amalgamation of root vegetable and green leafy vegetable. 





Purple yam is winter special vegetable. Purple yam is also known as Ratalu, Kand, Violet yam, Hiaaya, Uhi, Garadu and Indian purple yam. It is a root vegetable and a member of the Dioscoreaceae family, but don't get confused with name as this is not the sweet potato. The sweet potato has traditionally been referred as a yam in parts of the United States and Canada, it is not part of the Dioscoreaceae family and other important difference is that yams are starchier and drier compare to sweet potato.


Yam is high in vitamins C and B6, potassium, manganese and dietary fiber and helps to protect against heart disease and osteoporosis.

♨ INGREDIENTS REQUIRED FOR Kand Palak Sabzi (Purple Yam And Spinach Mix Veg Masala)




  • 250g Kand (Violet purple yam /Bengani Ratalu)
  • 1 Bunch Palak (Spinach)
  • 3 tomatoes (puree)
  • 2 Onions Finely chopped
  • 10-12 garlic cloves, chopped
  • 2 green chillies
  • Pinch of turmeric powder
  • Salt to taste
  • 1tbsp fresh milk cream for garnish
  • Cooking oil for frying as well as cooking.




♨ COOKING PROCESS



♨STEP 1: MISE EN PLACE


♦Purple Yam (Ratalu / Kand):- Wash, Peel and cut it into small cubes. (Please apply oil before cutting yam as it may irritate your skin).

♦Tomatoes:- Puree it.

♦Onions:- Peel and finely chop

♦Garlic:- Peel and chop

♦Green chillies:- wash and finely chop

♦Spinach:- Wash, Chop, Blanch and puree it.







♨Step 2 Boil and fry Purple Yam (Ratalu / Kand)


♦Boil purple yam for 10-12 minutes. Add 1Tsp salt at the time of boiling. Take out from water keep under running water and then deep or shallow fry Purple Yam. Keep it aside until needed.








♨Step 3:- COOKING TIME


♦Heat oil in frying pan over medium heat, add garlic and green chillies and saute for 10-15 seconds.




♦Add onions and sauté till they turn translucent. Now add tomato puree, salt and turmeric powder. Cook for 3-5 minutes.




♦Add spinach puree and fried purple yam mix and simmer for 3-5 minutes or cook till done. 




♦Serve hot garnished with purple yam and fresh milk cream. 




Notes:


1. Blanching and pureeing the spinach

Wash, clean the spinach leaves and chop. Add the chopped spinach leaves in boiling water.. Add a touch of turmeric powder, as that helps to retain its natural color.

Boil for 2-3 minutes. Drain the water and instantly transfer it in a colander and keep spinach leaves under running water tap. Put it in blender jar and puree it.
