Pulao is a South Asian rice dish (in Afghanistan, Bangladesh, Nepal, Pakistan, India, Iran), likewise known as Pilaf, Pulao, Pilau, Pilaf, Paella means the same and go to the same fraternity.
The main ingredients of the recipe are green garlic and tomatoes, as winter has begun in India, and this is the only season when we get fresh green garlic in our place.

Ingredients needed for the Green Garlic Vegetable Pulao
- 150 g Rice (wash and soak for 10 minutes)
- 10- 15 Green Garlic (Need both stalks as well as a bulb)
- 3 Tomatoes - puree
- 3tbsp Green Peas -boiled
- 70g Cauliflower - boiled
- 1 carrot -boiled
- 3tbsp French beans, chopped - boiled
- 1 capsicum, chopped
- 1 small piece garlic - chopped
- 3-4 Green chilly
- 2tbsp Refined oil
✏ Heat oil in the pan, add chopped garlic bulbs. Saute it for 1-2 minutes, till the change in color. Now add tomato puree and cook for 5-7 minutes, when you realize it is cooked and the oil is separated then add garlic stalk (green part). Mix and cook for another one minute on high flame.
✏ Add dry ingredients i.e. red chilly powder, turmeric powder and salt to taste. Cook vegetable for 3-4 minutes.
✏ Add Rice, salt and mix well and cook rice for another one minute, add water and, cook rice on high flame, when water evaporates, simmer covering lid slow, cook till done.
✏ Yummy Garlic Vegetable Pulao is ready to dish out.
