Jack fruit is the largest fruit tree, native to Southwest India. It belongs to the Moraceae plant family, which also includes mulberries, figs and bread fruit. It has a distinctive sweet and fruity flavor.




Jackfruit is a delicious miracle food. It provides a moderate amount of calories, but rich in fiber, vitamins, minerals and antioxidants. It is often used as a meat substitute due to its texture which resembles with shredded meat.

How long does jackfruit take to cook?
It depends on jackfruit quality and it is mainly cooked in pressure cooker with 4-5 whistles. More or less, it will take 30-35 minutes.

Ingredients needed

  • 500 grams unripe green tender jackfruit - peeled & chopped 
  • 3 Onions 
  • 4 tomatoes 
  • 10 garlic cloves 
  • 1 small piece ginger
  • 2-3 green chillies 
  • 1 tsp cumin seeds 
  • 2 tsp coriander seeds
  • 2 cloves - लौंग
  • 5-6 black pepper 
  • ⅛ black cardamom
  • 2 tsp red chilli powder 
  • 1 tsp turmeric powder
  • 2 tsp coriander powder 
  • Salt to taste
  • 1 tsp garam masala powder 
  • 1 lemon juice


Method 

Step 1 Mise en place

◾Jack Fruit - peel and cut into small pieces 

◾Onions - peeled - finely chopped 

◾Tomatoes - finely chopped or puree it

◾G3 paste - make ginger, garlic and green chilly paste

◾Corase grind - coriander seeds - cumin seeds - cloves and black cardamom.









Step 2 Stir fry jackfruit pieces

◾Heat 3-4 tbsp oil in a fry pan. Add jackfruit pieces, stir fry on medium flame for 7-8 minutes until light gold brown. Keep it aside until called for.




Step 3 Gravy preparation

◾Heat the oil in a pressure cooker. Add the finely chopped onions. Stir fry until light brown.






◾Add ginger, garlic and green chilly paste. Cook it for a min or two.





◾Add the tomato paste. Cook it on high flame for 4-5 minutes until nicely cooked.





◾Add coarsely grinder coriander seeds and cumin seeds.




◾Add turmeric powder, red chilly powder, coriander powder and salt to taste. Mix it all well




◾Add stir fried jackfruit pieces. Cook it for a minute or two.



◾Add 500 ml water or as needed. 




◾Cover the cooker with lid and allow 5-6 whistles.




◾Finally, add a dash of garam masala powder and lemon juice. Serve immediately with hot steamed rice.
