How to make Suran chips | Elephant foot yam chips | Fasting Food - Suran Chips



Hello Friends,

Today I'm going to share one more super easy and very delicious chips recipe. It is made with Suran aka Elephant Foot Yam. Sharing recipe with step by step photos..


My family loves these suran chips a lot. I cook it very frequently, as they are so easy to make, I never thought to post in my blog. But that day, mom's friend got very inquisitive about this recipe, hence decided to post in my blog. 



You can enjoy these chips as fasting food or it can also be used as a main vegetable in Indian curries. These chips are very satisfying and super delicious and I bet you can't eat just one...




Let's get it started...

Preparation time 10-12 minutes 
Cooking time 15-20 minutes 
Cuisine Indian 


Ingredients needed 

☑️450 grams Suran - elephant foot yam
☑️¹½ tbsp salt or according to your preference 
☑️Pinch of soda bicarbonate (optional) 
☑️Cooking oil for shallow frying 





Method 
Step 1 Mise en place

Suran - peel - chop - sliced

(Handle this vegetable with good care)


  • Wear gloves or apply coconut oil in your hands. 
  • Never wet the yam before peeling the skin. 
  • Always make sure it stays dry when you get rid of the skin.




Step 2 Blanching

Boil water in a medium pot over high heat. Add required quantity of salt to it. Allow it to boil for sometime. Add a pinch of cooking soda (soda bicarbonate). Immerse the Suran slices into the boiling water and cook it for about 5 minutes or till it gets 80% cooked. Cooking time also depends on the quality of suran, but make sure it should not be overcooked and also rid of the scum as an when required.. 





Transfer it into the colander and then keep it under running tap water for a few seconds as this will completely stop the cooking process... 





Step 3. Shallow Fry

Heat the cooking oil on a high heat. Add the suran slices. Cook it on high fire until golden brown. 



Remove the Suran chips in a paper towel to drain away excess oil, if any.



Step 4. Enjoy 

Sprinkle chat masala powder or chilly flakes or enjoy as it is.. Enjoy as a snack with your favorite sauce..
