How to make Sabudana Khichdi | Sago Khichadi | Spicy pearl tapioca stir fry | Sabudana Khichadi Maharashtrian Style
Sabudana is also known as pearl tapioca and sago. Sabudana Khichdi is a delicious snack recipe made with pearl tapioca which are overnight soaked and then stir fried with boiled potatoes, roasted crushed peanuts and flavored with cumin seeds and lemon juice.
Sabudana Khichdi is the most preferred fasting food in India. It can also be relished as a breakfast dish or anytime snack item. It is very delicious and easy to cook.
Important points to consider for perfect non sticky Sabudana Khichdi
- Wash sabudana nicely, overnight soaking works great and very important for this recipe .
- Soak sabudana in very little water. For 100 grams sabudana you'll need 15-20 ml of water.
- Don't cook sabudana on high heat
- Don't cook it for longer time..
- 1-2 tsp oil is sufficient.
- Don't add water while preparing.

- Soaking time overnight
- Preparation time 2-3 minutes
- Cooking time 5-7 minutes
- Serving 1-2
Ingredients required
- 150 grams sabudana
- 2 boiled potatoes
- 3-4 tbsp roasted peanuts
- 5-6 green chillies
- 8-10 curry leaves
- Handful of coriander leaves
- 1tsp cumin seeds
- 1 lemon
- 1-2 tbsp sugar (optional)
- Salt to taste
- 1 tsp cooking oil
Method
Step 1 Rinse & Soak
Wash the sabudana thoroughly and soak them in very little water for 7-8 hours. Sabudana grains should be separate and moist. (For 150 grams Sabudana you need 15-20 ml water)
Step 2 Mise en place
◾Green chillies - very finely chopped
◾Coriander leaves - very finely chopped
◾Potatoes - boiled - peeled - cut into small cubes
◾Peanuts - roast on hot griddle pan - peel off the skin - coarsely grind
Step 3 Cooking time
◾Heat oil in a frying pan. Add cumin seeds, green chilies and curry leaves. Stir fry for 5-10 seconds
◾Add the chopped potatoes. Stir fry for just a minute or so.
◾Add sugar, 1 tbsp lemon juice and salt to taste. Mix it all well.
◾Add roasted peanuts & sabudana. Keep stirring in between . Cook it for 3-4 minutes until soft & transparent. Serve hot garnished with coriander leaves.
