Gajar Ka Halwa is the most popular Indian dessert made during the winter months. It is prepared by cooking grated red carrots with ghee, milk, khoya, sugar, nuts and flavored with cardamom powder. As red carrots are back in season.. Yeh recipe to banti hai... I mean it would be so unfair, If I skip to post this recipe.
In our house Gajar ka halwa is a staple breakfast in every winter season. It is religiously cooked every year in this beautiful season.

If you're following my blog religiously then you as well know I avoid adding shop bought Khoya for my sweet preparation due to food adulteration. I prefer homemade Khoya or find suitable substitute of the same. In Gajar ka Halwa I've added fresh milk cream. Yes, you got word it right, fresh cream, which we collect daily from our milk and make ghee. I store cream in freezer compartment so it's fresh, in good usable condition and without any bad smell.

- Preparation time 12-15 minutes
- Cooking time 30-35 minutes
Ingredients required
- 1 kg red carrots
- 500 ml milk
- 1 cup fresh milk cream
- 2 tsp cardamom powder
- 2-3 tbsp poppy seeds - khus khus
- Handful of almonds
- 4-5 tbsp ghee
- 60-70 grams sugar or as preferred
Method
💁Step 1 Mise en place
◾Carrots - wash - pat dry - peel & grate
◾Milk - cook it on slow flame until 20-30% reduced
◾Almonds - roughly chopped or coarsely grinder
◾Milk - boiled and preferably 20% reduced.
💁Step 2 Cooking time
◾Heat 4-5 tbsp of the ghee in a pressure cooker on medium heat. Add the grated carrots and stir. Cook it on high flame for 2-3 minutes.
◾Add poppy seeds, mix it well.
◾Cover the cooker with lid and allow 2 whistles.
◾Open the pressure cooker, add milk. Leave it to boil and cook it for 3-5 minutes.
◾Now again cover the cooker with lid and allow 2-3 whistles.
◾Open the cooker, add chopped nuts, cream and cardamom powder. Mix it all well.
◾Cook the carrots in slow to medium flame till milk is completely evaporated. Keep stirring in between...
◾Lastly add sugar and cook till halwa leave the sides and ghee starts to separate.
◾Garnish it with your preferred nuts serve hot or as preferred.
