The plan of action for today's recipe is as follows
1. Steam Amla
2. Mix powdered sugar with amla and keep it aside for 48-50 hours
3. Sun Dry for 2-3 days
4. Sprinkle lightly with powdered sugar

Ingredients required
- 500 grams Amla
- 300-350 grams powdered sugar
- + 2 Tbsp powdered sugar for last step
💁Method
♨ Step 1 Mise en place
◾Amla - Indian Gooseberries - wash - pat dry - steam for 10-15 minutes, depending on the quality of amla - separate the wedges - discard the seeds - keep it aside until called for.
♨ Step 2 mix powdered sugar
◾You need an airtight glass container for this. In a glass container, put amla wedges, sprinkle powdered sugar, toss it well. Keep it aside for 48-50 hours in a cool dry place.
♨ Step 3 separate amla wedges and cook the syrup
◾After 48 hours you'll notice it draws moisture out of fruit and that results in combining with the sugar and it creates a syrup.
◾So now its time to separate the amla wedges from syrup. Please don't throw the syrup, rather cook it on slow flame for 8-10 minutes until color changes to golden brown. In this way, we will receive our amla honey syrup.
How to use amla honey syrup Drink first thing in the morning with warm water, add 1 tbsp of this syrup in lukewarm water and drink or you can use this in green tea as honey substitute..
♨ Step 4 Sun Drying
◾Transfer separated amla in a tray and then sun-dry for 2-3 days, also see to it that should not get very hard.
♨ Step 5 lastly sprinkle sugar
◾Lastly sprinkle 1-2tbsp sugar and mix it well. Your amla candies are ready to eat. You can also sprinkle salt, black salt powder according to your preferences.
◾Store in an airtight container and relish the goodness of amla through the year or till it last.. It's very addictive in taste so next to impossible to store it for long.. Goodbye for now... Happy Cooking...
