I'm back with one more very interesting, healthy, nutritious, lip smacking curry recipe from the Mughlai cuisine. Sharing recipe with step by step photos..


Navratan Korma is a rich, creamy, flavorful and super delicious vegetarian dish from the Mughlai cuisine. It is basically an irresistible assortment of various colorful vegetables, fruits and nuts, which simmer in a slightly sweet, rich and creamy sauce made with curd, cream and cashew nuts.


Navratan is an amalgamation of two words.. Nav means nine and Ratan means gems or precious gemstones. Hence, this dish literally translates to nine gems curry. The “gems” are the fruits, vegetables and nuts that form up to the rich gravy.



Korma - The word Korma also spelled as Kurma - Khurma - Qorma is a dish from South and Central Asia.  Basically, it is a mildly spiced yogurt based thick gravy with the perfect blend of fragrant spices in which meat or vegetables are braised. . 



Today's Navratan Korma is again very easy to follow recipe. I love to design all my recipes in a very simplified way and the best part they are religiously followed, very much loved and appreciated.. In today's recipe I have used Parampara Biryani Mix and credit for this goes to my very dear friend M.. 



I still recall, I always use to argue and fight with her as not advisable to go with ready to use masala's that too after successful completion of Diploma in Hotel Management, but she keeps insisting me to give it a try.. And on the top of it, I always used to get irritated and ignore ready to use spice mix section in supermarkets as why to invest good amount on those as we can actually create our own spice mix and recipes.. But as said as the company so the color... and I actually started exploring that section.. 


Let's get started 

☑ Recipe details 

🔹Preparation time 10-12 minutes 
🔹Cooking time 12-15 minutes 
🔹Servings 3-4
🔹Cuisine - Indian

☑ Ingredients required 

🔸200 g canned button mushrooms
🔸2-3 tbsp Makhana 
🔸1 small capsicum
🔸35-40 g cauliflower 
🔸35-40 g french beans 
🔸1 small tomato
🔸10-15 cashew nuts 
🔸1-2 tbsp raisins (optional) 
🔸3-4 tbsp peas 
🔸½ tsp ginger garlic paste
🔸1-2 tsp poppy seeds
🔸1 small carrot
🔸1tbsp cooking oil
🔸1 tbsp ghee or butter 


☑ For Korma Paste

🔹2-3 tbsp Biryani masala 
🔹2 tomatoes 
🔹2-3 green chillies or as per taste 
🔹10-12 cashew nuts 
🔹2-3 tsp poppy seeds
🔹3-4 tbsp fresh thick curd
🔹2-3 tbsp unsweetened mava - Khoya Or 
🔹2-3 tbsp fresh cream + 1 tbsp ghee
🔹½ tsp garam masala powder 
🔹2-3 tsp Kashmiri red chilli powder 
🔹1-2 tsp sugar
🔹1 tsp salt 


☑ Method 

♨ Step 1 Mise en place


Mushrooms - open the can of mushroom - pour the contents of the can into a colander - rinse and keep it under normal tap water for 2-3 minutes or until all the brine has run off. Blanch them for a min or two.. Chop the mushrooms into bite size pieces or into halves. Keep it aside until called for.








Carrots - peeled and chop them into bite size cubes.

Capsicum - cut them into little cubes 

Tomato - finely chopped 

Cauliflower - cut them into bite sized florets.


Makhana - Dry roast the phool makhana on slow flame for 5-7 minutes till they become crispy. 



♨ Step 2 Make Korma Paste

◾In a food processor add Biryani masala powder, chopped tomatoes, chopped green chillies, poppy seeds, cashew nuts, fresh cream, curd, red chilli powder, sugar, salt and 1 tbsp ghee or butter, mix it well and grind it to fine paste. Keep it aside until called for.







♨ Step 3 prepare the veggies 


◾Combine peas, carrots, french beans and cauliflower in a saucepan and cook it on slow to medium flame for 8-10 minutes or until 80% cooked. Drain the water completely.. Keep it aside until called for.. 





♨ Step 4 Korma preparation 


◾Heat oil on a medium high heat in a large pan or wok, add boiled veggies, stir fry for a minute or two. 


◾Add blanched mushrooms, roasted makhana, 1 tsp poppy seeds raisins and cashew nuts.. Stir fry for about a minute or two.. 



◾Add red chilly powder, turmeric powder, coriander powder, ginger garlic paste and salt to taste. Mix it well. (Add salt considering already mixed with korma paste) 




◾Add korma paste, mix it well.. Stir fry 3-5 minutes, then add chopped capsicum , ½ chopped tomatoes and ½ -1 cup water, cover it with lid, cook it on slow flame for 5-7 minutes until the oil separates.













◾Garnish it with coriander leaves... Serve it hot with Chapati or Naan or with your favorite Indian bread.
