The USP of today's recipe is that it is created from scratch. Usually, pizza sauce recipes are made from store bought tomato paste or tomato sauce. But this is prepared from very fresh, red and juicy tomatoes.
The action plan for today's recipe is blanching of tomatoes followed by pureeing and then cooking it on slow flame with garlic, onion, basil leaves and flavored it with Italian seasoning and chilli flakes.

♨Preparation time 8-10 minutes
♨Cooking time 25-30 minutes.
♨Yield 150-200 grams pizza sauce
✔5-6 medium tomatoes
✔A handful of fresh basil leaves
✔One medium onion
✔5-6 garlic cloves
✔3-4 tsp mixed Italian seasoning
✔1tsp black pepper powder
✔2tsp red chilli flakes
✔½ tsp Kashmiri red chilli powder
✔1-2 tsp sugar
✔A dash of citric acid crystals (3-4 crystals)
✔1-2 tbsp tomato ketchup
✔1tbsp olive oil
♨ Step 1 Mise en place
◾Tomatoes - Follow blanching process - Put a small cross at the bottom end of the tomatoes - put them into a vessel of boiling water - cook for 5-7 minutes on medium to high flame - turn off the heat - immediately remove the blanched tomatoes and place them in cold water. Drain the water, peel the tomato skin and discard. Roughly chop - put them in blender and puree it. Keep it aside until called for.
♨ Step 2 Cooking Time - Sauce preparation
◾Add Italian seasoning, kashmiri red chilli powder, black peppercorn, red chilli flakes, sugar and salt to taste. Mix it all well and cook it on slow flame for 15-20 minutes until sauce thickens.
◾Lastly add tomato ketchup and citric acid crystals, mix it well and switch off the gas stove. Our sauce is ready.
◾Just put it in the refrigerator. Use as and when required.
