How to make Kesar Pista matka kulfi | Authentic Recipe of Kesar Pista Matka Kulfi | Easy Homemade Matka Kulfi Recipe
Kesar Pista Kulfi is a summer special, purely divine frozen Indian dessert made with thickened milk, sugar, saffron and pistachois.
Let's get started-
⚫Cooking time 60-80 min
⚫Kulfi set time overnight
⚫Serving 6-7 matka kulfi
⚫135-150 grams sugar
⚫2-3 tbsp cornflour
⚫3-4 tbsp of Pistachios
⚫10-12 saffron threads
⚫1tsp green cardamom powder
✔Step 1 Mise en place - soaking of saffron
◾Soak saffron threads in 2tbsp of warm milk and keep it aside until called for.
✔Step 2: Reducing milk to half of the original quantity
◾Take a heavy bottomed or non stick pan. Grease it with a few drops of ghee with the help of pastry brush to avoid milk sticking to the sides and bottom. Pour milk in a greased pan and bring to a boil, keep stirring in between.
◾Slow the flame and allow the milk to simmer for 35-40 minutes. Continue stirring in between and cook the milk till it reduces to half of the original quantity.
✔Step 3 Add the remaining ingredients
◾Add sugar, saffron and cardamom powder, cook again for 5-7 minutes until the sugar is fully dissolved..
✔Step 4 Add cornflour
◾Dissolve cornflour in ½ cup water.
◾Add dissolved cornflour into the thickened milk, cook again for 3-5 minutes until cake like batter consistency is obtained. Switch off the gas stove, allow it to cool down.
✔Step 5 Allow it to set
◾Pour into terracotta pots and freeze overnight or till ready.
✔Step 6 Garnish and serve
