Sharing step by step breakfast recipe of masala Pav Upma - unique recipe of ladi pav which is cooked in Tomato, Garlic and Fresh Coriander Leaves and flavored with tamarind and Indian spices..


Masala Pav Upma is a very simple, easy to make, super quick, delicious, healthy and excellent recipe made with flavored bread pieces. This can be made with fresh or left over bread or Ladi Pav. Pav means bun bread - slab of bread rolls.

               

The plan of action for this recipe is to cut the bread buns into small pieces with the help of scissor. Then soak them in turmeric and salt water for a few seconds and then cook it in green garlic tamarind tomato paste and flavor it with Indian spices.

☑ Ingredients required 

⚫6 Pav (Bread Buns)
⚫1 handful of coriander leaves 
⚫2 tomatoes 
⚫2 green chillies 
⚫8-10 garlic cloves - chopped 
⚫1tbsp tamarind paste
⚫1tsp turmeric
⚫2 tsp coriander powder
⚫2tsp red chili powder
⚫ 1tsp cooking oil
⚫salt to taste 
⚫2tbsp Pomegranate seeds for garnish (optional) 




Method


☑ Step 1 - Mise en Place


⚫Bread Bun - cut into small pieces - soak them in salt and turmeric water for a few seconds.


⚫Garlic - Peeled and chopped ⚫Make Coarse paste of cilantro leaves, tomatoes and green chillies by adding ½ cup of water.
⚫Tamarind - soak it in hot water.



☑ Step 2 - Cooking Time


⚫Heat oil in a frying pan, add chopped garlic, Sauté for 30 seconds, till the change in color. Add coarsely grinder tomato, cilantro leaves, green chilly coarse paste and cook for 5-7 minutes on high flame.



⚫Add dry ingredients that is turmeric powder, coriander powder, red chilly powder and salt to taste. Mix well and then add tamarind paste and soaked bread pieces. Gently mix it well Cover with the lid and simmer for 3-5 minutes until cooked.




⚫Serve hot garnished with pomegranate seeds, green chillies and coriander leaves.
