I am back with one more super quick and very delicious recipe for you. Today's post is all about how quickly and easily you can make street style lip smacking and very tempting paani for Panipuri. This is tried and tested recipe in my kitchen and super duper hit... Sharing recipe with step by step photos.
Panipuri - Golgappa aka Puchka needs no introduction in India. It is one of the most preferred and very much loved street food in India. My today's recipe is a must try for all the Panipuri lovers.
The success rate of panipuri is mainly depends on how tasty and healthy is your pani and chutney preparations. The USP of my this recipe is it is made and created considering age group 5 to 65, as food for me is not just taste but health as well..

My Panipuri recipe is designed in a way that it is going to be the perfect combination of health and taste.. I have made three Pani/ chutney preparations for this panipuri recipe
1. Pani for panipuri ( this is less spicy and can be enjoyed by kids as well)
2. Sweet chutney / meetha pani made with tamarind, dates and jaggery and indian spices.
3. Teekha Pani / chutney this is very simple and easy. It is prepared with a handful of a coriander leaves, green chillies, water and salt taste.

Ingredients needed
For Pani for Panipuri
- 5-6 cups water (approx 1250 ml)
- Handful of coriander leaves
- 50-60 mint leaves
- 1-2 Green chillies or as preferred
- Small piece ginger
- 2 tbsp Jaljeera Powder
- 1-2 tsp salt or as preferred
- 50-80 grams Jaggery
Method
Step 1 Mise en place
Mint leaves - remove stems - pluck the leaves - rinse well - keep aside until needed.
Coriander leaves - remove thick stems - rinse well - roughly chopped
Green chillies - wash - roughly chopped
Ginger - wash - peel - roughly chopped
Jaggery - smash it or thin it into small pieces - place jaggery & 1 cup water in a medium size pan - cook it on slow flame until it gets fully dissolved - strain - keep aside until called for.
Step 2 Make a very fine green paste
Combine mint leaves, coriander leaves, green chillies, ginger piece and very little water in a blender jar and grind to a very fine paste.
Step 3 Combine all - and make pani for Panipuri
Now add the fine green paste and salt to taste. Mix it all well..
Keep it in the refrigerator for at least 2-3 hours.

For Sweet chutney (tamarind - Jaggery - dates mix)
Ingredients needed
- 50 grams Tamarind
- 50 grams Jaggery
- 60- 80 grams seedless dates
- 2-3 tsp sugar
- 1tsp ajwain (carom seeds)
- ½ tsp cinnamon powder
- 1 tsp cumin seeds
- 2 tsp red chilli powder
- 1tsp jaljeera powder - optional
- Salt to taste
Method
Adjust the consistency as per your preference.. Our sweet chutney is also ready for Panipuri

3. Spicy chutney

- Handful of coriander leaves
- 10-12 green chillies
- Salt to taste
- Water..
method
Combine all the ingredients in a grinding jar. Blend and make it very fine .. adjust consistency as required. Our spicy water is also ready for Panipuri. (This pani is for those people who prefer very spicy pani puri and don't want to make main pani very spicy, so make it separately and add as required.)

Which Jal jeera powder is used in this recipe is it ok if I use Everest jaljira powder
ReplyDeleteUse whichever is easily available to you. I have till today used two brands of jaljeera powder - MDH Jaljeera masala and Jalani Jaljeera Powder, both were very good.. I fully understand your concern and non availability of many ingredients due to lock down, so pick depending on availability..
