Winter is very beautiful and special month and I believe it is a good month for food bloggers as we get lots of fresh veggies and fruits to explore and incorporate into our daily diet. I enjoy creating recipes using these healthy ingredients and more so it's like keep trying different permutation and combinations..


Thecha is a Marathi word. It means to pound or crush. Thecha is basically a coarsely crushed, spicy condiment prepared across the many states of India, but regarded as a specialty of Maharashtra. The interesting thing about this recipe is that every house has their own version, but the basic ingredients are more or less same. The ingredients which are added in this accompaniment are chillies, roasted peanuts, cumin seeds, garlic in good quantity, ginger & fresh coconut. 



I am craziest fan of this accompaniment and enjoy to the core. Today's thecha recipe is my creativity and slightly different from the authentic thecha recipe..

Recipe details 


  • Preparation time 8-10 minutes 
  • Cooking time 3-5 minutes 
  • Cuisine Indian 
  • Spice level ๐ŸŒถ๐ŸŒถ๐ŸŒถ


Ingredients required 

  • 25-30 garlic cloves
  • Handful of fresh green chives
  • 2-3 tbsp coriander leave
  • 2-3 tbsp roasted peanuts 
  • 15-20 green chillies or as preferred 
  • 2-3 tbsp olive oil / cooking oil
  • 1 tbsp lemon juice (optional) 
  • Salt to taste


Method
๐Ÿ’Step 1 Mise en place - Vegetable cutting 


◾Garlic - bulbs - peeled 

◾Garlic - chives- roughly chopped 

◾Green chillies - wash - pat dry - roughly chopped 

◾Coriander leaves - wash - roughly chopped 

◾Peanuts - dry roasted - de- skinned 

๐Ÿ’Step 2 - Stir fry garlic cloves 

◾Heat 1-2 tbsp oil in a fry pan over medium heat. Add the garlic. Stir fry on slow to medium flame, roast evenly and cook until golden brownish. Remove from pan and place it in a bowl. Keep it aside until called for.





Step 3 Stir fry all other ingredients


In the same fry pan, add green chilies, cilantro leaves and garlic chives. Stir fry on slow flame for 3-4 minutes. Take away from a gas stove. Allow it to cool down a little. 




๐Ÿ’Step 4 Combine & coarsely grind


◾Combine following ingredients in a mix grinder jar and pulse for 12-15 seconds until coarsely grinder. If needed, add lemon juice and 1-2 tsp of olive oil. 

The Ingredients added in the mixer grinder jar are as follows - stir fried garlic + stir fried green chillies, coriander leaves, garlic chives + roasted peanuts and salt.












◾Serve right away with your favorite Indian Bread. It is mainly served with Pithla Bhakari. Store it in an airtight container and refrigerate, use it as and when required.. Eat with care as freakishly spicy.
