I'm back with one more winter special carrot pickle recipe for you. Sharing super quick carrot pickle recipe with step by step pictures.



Today's carrot pickle recipe is super quick, very delightful, perfect accompaniment for any meal of the day. This pickle is prepared in India in the winter season as fresh pink carrots are available in this season.


This recipe is oil free, water based carrot pickle made with mustard seeds powder, red chilly powder, turmeric powder and vinegar. The plan of action for today's recipe is to blanch the carrots and pickle it with Indian spices and vinegar.

▫Preparation time 8-10 min
▫Cooking time 2-3 min

☑Ingredients required

▫500 grams carrots
▫1tbsp mustard powder
▫1tbsp red chilli powder
▫1tsp turmeric powder
▫1-2 tsp fennel seeds
▫1-2 tbsp Vinegar
▫⅓ tsp asafoetida
▫Salt to taste
▫700-750 ml boiled water

☑Method
✔Step 1 Mise en place

Carrots - Washed - Peeled - Cut into 1.5 - 2 inch slices - blanched.
You can skip blanching  of carrots as actually not needed. I follow blanching process the reason is my family loves that way and plus they don't have patience to wait long for this pickle.πŸ€“πŸ˜Š








Water - boil it and leave it to cool down.

Pickle bottles or Jars - sterilized

Powder it - add all the ingredients in a mixer gtinder jar and powder it. 







✔Step 2 - Pickle Preparation 

◾Take a sterilized glass jar, add carrots and fine powder prepared above.







◾Pour the boiled water and 1 tbsp vinegar. See to it that water should cover the carrot slices nicely. Now close the jar lid tightly and shake it







◾Keep this jar in sunlight or a warm place for two to three days and allow it to mature and shake this bottle every day. It will be ready to use within 4-5 days.


☑Notes


◾This pickle has a short shelf life, so prepare this in small quantity, store this pickle in cool place and best is consumed within 2 weeks time.
