Sweet Corn Fried Rice



How to make Sweet Corn Fried Rice | Super quick and easy recipe of sweet corn fried rice with stepwise images..


Monsoon in India is synonymous with the arrival of the fresh sweet corn season. Butta aka roasted corn on the cob is the most popular street food in India. And when fresh, juicy and ripe corn is getting roasted on charcoal fire on a beautiful rainy day that luscious aroma is super divine and when it is flavoured and spiced with lemon juice, red chilly powder and salt... it becomes World's one of the most delicious and heavenly pleasurable food for this beautiful season.


My today's recipe star ingredient is Fresh Sweet Corn. Sweet Corn Fried Rice is an Indo Chinese recipe of steamed rice and veggies which are stir fried with sweet corn and colourful veggies and flavoured and spiced with green chillies and fried rice masala powder. If fried rice masala powder is not easily available to you , then use soya sauce, chilly sauce, vinegar and Monosodium Glutamate as per your tase. In India the most popular brand name of this product is Ajinomoto ... 


Like Schezwan fried rice this is again very easy and simplified recipe ...



The plan of action for today's recipe is as follows :-

1. Boil sweet corn kernels until soft
2. Cook rice by draining method.
3. Vegetable cutting 
4. Stir fry rice and vegetables 
5.Serve hot



Cooking rice by draining method is best suited method for the fried rice. Cooking rice by draining method means the rice is cooked in lots of water and then drained in a colander and then kept under running tap water to halt the cooking process.



Let's get started 


☑Recipe details 

⚫Cuisine Indo Chinese Recipe 
⚫Rice Soaking time 15-20 minutes 
⚫Preparation time 12 - 15 minutes 
⚫Cooking time 12-15 minutes 

☑Ingredients required 

⚫120-150 grams rice
⚫7-8 tbsp fresh sweet corn kernels
⚫35-40 grams cabbage 
⚫½ onion
⚫1 small carrot 
⚫1 capsicum
⚫5-6 green chillies or as per preference 
⚫4-5 garlic cloves 
⚫1 small piece ginger 
⚫1-2 tsp fried rice masala powder (added Ching's secret Schezwan fried rice masala powder)
⚫Salt to taste
⚫1-2 tbsp Cooking oil



☑Method

✔Step 1 Mise en place


Rice - Wash and soak it for 15-20 minutes. After 20 minutes, rinse again and cook rice by draining method. Keep it aside until called for.


Sweet Corn - Scrap the corn kernels from the cob. Fill the pan with enough water to cover the corn and bring it to a boil. Cook it for 8-10 minutes until soft.


Vegetable cutting - Wash - peel and roughly chop and put all the vegetables mentioned above in a mini chopper and pulse for 10-12 seconds.. 



✔Step 2 Cooking time 

◾Heat oil in a large fry pan. Add all the chopped veggies and stir fry for 3-4 minutes on medium to high heat. 

◾Add sweet corn kernels and stir fry for a minute or two. 

◾Add fried masala powder and salt to taste,mix it well. 

◾Add cooked rice, mix and cook it for 3-5 minutes. 


◾Garnish it with fresh corn kernels. 



Serve hot with your favourite sauce or raita.

  2. Fried rice is a fail safe option for me when I really very hungry and want something quick and spicy. I also add sweet corn sometimes, so I can tell they tasted delicious. Your version sounds lovely, Deepa.
