Today's blog post is a very famous vegetarian dish from Sindhi cuisine. This dish is also known as Aani Basar. Aani is a Sindhi word which means fish roe and basar means onion. So you can also call this dish as Vegetarian Fish Roe Sabzi In Onion Gravy. Sounds very interesting, isn't it! Sharing recipe with step by step pictures...



Besani Bhaji or Aani Basar is an authentic Sindhi recipe. It is super delicious and most demanded recipe in every Sindhi house. I have seen people going crazy for this preparation. This recipe is a very lengthy preparation, but trust me, end result is very much satisfying. 



Though this recipe looks very easy to make, but actually it is not so. You need good practice for this recipe, especially in besan tikki preparation. The correct quantity of mohan and water to knead the dough is very important to avoid tikkis to break at the time of frying. Plus, if mohan is not added in correct proportion , it will make tikkis very hard, which result in a big flop show. The besan tikkis should be soft and melt in mouth texture and at the same time it should not break when cooked in onion gravy.

♨ Recipe details 

🔹Preparation time 15-20 minutes 
🔹Cooking time 25-30 minutes 
🔹Cuisine - Sindhi - Indian
🔹Servings 4

☑Ingredients required 

♨ For besan Tikki

🔸200 grams besan - gram flour
🔸1- 1½ Ladle cooking oil
🔸4-5 tsp poppy seeds - khus khus
🔸2 tsp red chilli powder
🔸⅓ tsp turmeric powder
🔸1tsp dried pomegranate seeds - anar dana 
🔸⅓ tsp ajwain - carom seeds
🔸Pinch of soda bicarbonate
🔸Salt to taste 
🔸5-6 sprigs coriander leaves
🔸4-5 green chillies 
🔸½ onion - finely chopped - optional 
🔸⅓ cup Water or as required 

♨ For Frying

🔹250 ml Cooking oil 

For Gravy
🔸6-7 onions
🔸4-5 tomatoes 
🔸3-4 green chillies 
🔸1 tsp ginger garlic paste
🔸2 tsp garam masala powder
🔸2-3 tsp red chilli powder
🔸1 tsp turmeric powder
🔸3-4 tsp coriander powder
🔸Salt to taste
🔸1ladle cooking oil








☑ Method 

♨ Step 1 Make Besan Tikkis




◾Combine besan and all the other ingredients mentioned under besan tikki. Mix it all well, prepare a stiff dough. 








◾Divide the dough into 8-9 equal portions and shape each portion into an oval shape tikki.



◾Heat oil in a fry pan, shallow fry the besan tikkis on medium heat till both the sides are light golden brown in color. Remove the tikkis from oil.  Drain it on the absorbent paper. Keep it aside until called for.. 







♨ Step 2 Gravy preparation 


◾Heat the oil in a frying pan. Add onions, saute till light gold.



◾Add tomato puree and ginger garlic paste, mix it well.



◾Saute them on high flame for approximately 5-7 minutes or until the oil starts to separate. Add coriander powder, turmeric powder, red chilli powder and green chillies. Mix it all well. Cook it for a min or two. 



◾Add garam masala powder mix it well.



◾Add besan tikkis and 1 cup water, cover it with lid, cook it on slow flame for 5-7 minutes. Check the tikki by inserting a knife. It should be soft and easy to break.. Lastly garnish it with coriander leaves. Serve hot with Chapati or rice.
