How to make Dahi Baingan Bharta | Roasted Eggplant with Yogurt | Dahiwale Baingan Ka Bharta

Today's recipe is very healthy and best suited recipe for the Baingan lovers for this summer season. Sharing recipe with step by step photos. 



It's not even the end of march month, but temperature across the country reached extreme levels. It feels like we have already reached the last week of May month. Killer heat waves! Monday was recorded as the second hottest day since 2014.



Today's recipe was made considering the current weather conditions. Dahiwala Baingan Ka Bharta is very easy, flavorful, easy to digest eggplant recipe for this summer season. The USP of this dish is that it needs much less spices as compared to our regular Bharta recipe.

🔸Preparation time 10-15 minutes
🔸Cooking time 5-10 minutes
🔸Servings 2-3

☑Ingredients required

🔹1 Baingan - eggplant 
🔹1 cup strained yogurt - greek yogurt
🔹1 onion
🔹3-4 green chillies or as per taste
🔹3-4 garlic cloves (optional)
🔹1 tbsp cooking oil
🔹1tsp turmeric powder
🔹1tsp red chilli powder
🔹½ tsp cumin & fennel seeds powder
🔹Salt to taste





Method


♨ Step 1 Mise en place



Onion - peeled and roughly chopped

Garlic - peeled and roughly chopped

Green chillies - roughly chopped

Yogurt - mix it well until smooth and creamy.




Baingan - Wash - pat dry - prick and roast it over direct fire on gas stove. Keep turning at regular intervals for even cooking. Cook it on medium flame for 15-20 minutes or until it is nicely cooked. Just leave it to cool down. Discard the skin and mash the pulp. Keep it aside until called for.







♨ Step 2 cooking time


◾Heat the oil in a frying pan. Add onions, garlic and green chillies. Stir fry for 2-3 minutes, until onion becomes translucent.



◾Add mashed baingan, mix it well, add very little water and cook it for 2-3 minutes. Keep the heat low and stir continuously. 




◾Add turmeric powder, cumin & fennel seeds powder, red chilli powder and salt to taste. Cook it for a min or two, then switch off the gas stove. Allow it to cool down a little.



◾Add yogurt to it and mix well.



◾Garnish it with some coriander leaves. Our Dahiwala Baingan Bharta is ready to dish out. It can be enjoyed at room temperature or you can refrigerate it and serve chilled.
