Kidney beans are a variety of common beans. True to their name, these beans are kidney shaped, deep red in color and has a soft and creamy flesh. The other common names of this legume are Rajma and Surkh Lobia. Kidney beans are available in dried as well as in canned form.
☑ Cooking Instructions
Kidney beans can be never consumed in raw or partially cooked form as they do hold in toxins. Eating them in raw or inadequately cooked form may lead to symptoms that indicate food poisoning. The symptoms of food poisoning - Extreme gastrointestinal upset - stomach pain, nausea and vomiting..
It is very important to soak these beans for 8-10 hours and after that water needs to be thrown out and then rinse again, and at the time of cooking, add fresh water and pressure cook and allow 5-6 whistles and after that water in which beans are cooked also needs to be discarded ...
☑ Why to discard that water?
The reason is it carries relatively high amounts of phytohaemagglutinin and due to this they are more toxic compared to other beans.
☑ What is phytohaemagglutinin?
Phytohaemagglutinin (PHA) is a plant protein aka lectins which is found in certain legumes that can cause food poisoning. It means indigestion of raw and partially uncooked kidney beans.
Another important thing about kidney beans cooking is that never add salt at the initial stage as it toughens their skin.

☑Ingredients required
⚫1 cup Kidney beans
⚫8-10 garlic cloves
⚫Handful of coriander leaves
⚫2-3 green chilies or as per preference.
⚫2-3 medium size tomatoes
⚫½tbsp tamarind paste (optional) or
⚫½ lemon juice (optional)
⚫1 tsp turmeric powder
⚫salt to taste
⚫1 tbsp ghee or cooking oil
☑Method:
✔Step 1 Mise en place
◾Kidney beans - Soaked overnight - nicely rinsed - add fresh water and pressure cook allow 7-8 whistles. Drain the water - Keep it aside until called for..
✔Vegetable cutting
◾Tomatoes - washed - finely chopped or sliced
◾Ginger washed, peeled and chopped
◾Garlic peeled and chopped
◾Green chilies washed and finely chopped
✔Prepare a green paste - coarse grinding
◾In a mixer grinder jar, add sliced tomatoes, green chilies, cilantro leaves and pulse for 10-12 seconds. Now open the grinder jar, add chopped garlic and garlic cloves and pulse for 3-5 seconds..
✔Step 2 Cooking time
◾Heat oil in a deep fry pan over medium heat, add coarsely grinder green paste.
◾Stir fry it on medium to high flame for around 2-3 minutes,
◾Add turmeric powder, red chilly powder, and salt to taste.
◾Mix well and then add boiled kidney beans and 1-2 cups of water.
◾Cover with the lid and simmer for 8-10 minutes.
◾ Serve hot garnished with lemon slice and chopped fresh coriander leaves.
