How to make Crispy Arbi Masala Fry | Fried Arbi Recipe | Taro Root Fry | Kachaloo Masala Fry Sindhi Arbi Tuk | Kachalu Took


Today I am going to share with you one of my most favorite Arbi recipe. Arbi Masala Fry is a scrumptious side dish recipe made with boiled and shallow fried Taro roots. I believe this recipe is one of the best recipe to test your culinary skills. 


Colocasia vegetable is a perennial herbaceous plant commonly grown from its starchy and sweet tuber. It resembles with potatoes. Both leaves and roots are used in cooking. Very famous and delicious Gujarati Delicacy - Alu wadi - Pathrode (Patra) - is prepared from Arbi leaves.


The common names of this root vegetable are Eddoe Eddo, Kalo, Dasheen, Taro roots, Colocasia esculenta, Arvi, Kochur Mukhi (Bengali), Kachaloo in Punjabi chembb or Chembu (Malayalam), Pindalu (Nepali), Chamagadda/ chama dumpa (Telugu), Seppankizhangu (Tamil) 



Arbi is a widely cultivated tropical Asian root vegetable. It has broad peltate leaves and large starchy edible tubers. It is an edible variety of tuber Colocasia. But it should never be consumed in raw form. The reason is Calcium oxalate - crystalline chemical . Calcium oxalate is a water-insoluble salt that forms bundles of needle like crystals which causes soreness in the throat and in the mucus membranes. 


Arbi is a very good source of carbohydrates and dietary fiber. It is an easily digestible vegetable, and loaded with minerals and vitamins that are essential for human health. 


Today's recipe is a must try recipe for Arbi lovers. It is also famous among vegetarian as the Veg Fish Recipe:) It is crispy and crunchy from outside and soft from inside. It tastes amazing and I bet, you can't eat just one..




Let's get started..


♦ Recipe details

♦ Ingredients

250 grams Arbi 
1tbsp Cornflour or rice flour
2tbsp Coriander powder 
3tsp red chilly powder
½tsp turmeric powder
½ tsp dry mango powder (optional) 
Salt to taste 
100ml Oil for frying 


♦Method


◾Step 1 : Boil and peel

♨Rinse the Arbi under running water, make sure all the mud and dirt is removed. Boil them in sufficient water. Add ⅓tsp salt. Allow one or two whistles depending on the quality of the Arbi. OR you can boil them in an open pot for 7-8 minutes. Please note: we don't want mushy Arbi. Remove Arbi from the water. Leave it to cool down first and then peel the skin.




◾Step 2; Press with your palms

♨Now use a kitchen napkin or disposal napkin and flatten boiled Arbi with your palms.





◾Step 3: Coat with Corn Flour 

♨Coat each Arbi with Cornflour or rice flour.



◾Step 4: Shallow Fry

♨Heat oil in a deep nonstick frying pan. Fry arbi on medium hot flame. Add 5-6 pieces at a time don't overcrowd them. Fry them till slightly browned.




◾Step 5: Coat with dry masala 

♨Now take above mentioned dry ingredients in a plate. Mix all well, coat this masala nicely over the fried arbi.



◾Step 6: Saute 

♨Take 1tbsp oil in frying pan . Place Arbi and toss them on both the sides.


♨ Serve hot with dal and rice..

    Yes, I agree with you Anu, This vegetable has unique taste. We need to take very good care in Arbi preparation as it affects bad way and create a lot of itching if not cooked properly. Thank you so much dear. :)
