How To Make Stuffed Brinjal | Chatpatte Masaledar Bharwan Baingan | Bharleli Vaangi | Small Stuffed Brinjals - Maharashtrian Style
Chatpatte Masaledar Bharwan Baingan is a Sweet and Spicy Classic Maharashtrian Recipe of Stuffed Brinjals (eggplant) which is flavored with peanuts, jaggery & tamarind paste.
This recipe is most preferred and religiously consumed brinjal recipe in our house. It goes well with jowar roti, bajri roti, chapattis and steamed rice. In marathi, this recipe is known as Bharleli Vaangi.

♨ INGREDIENTS REQUIRED FOR STUFFED BRINJALS
- 300g small size Brinjals
♨ For Stuffing
- 1 medium onion -chopped
- 2tbsp Peanuts (roasted or fried)
- 2tbsp grated fresh coconut
- 30g Grated Jaggery
- 1tbsp Tamarind Paste
- 2tbsp red chilly powder
- 2tsp cumin seeds
- 3 garlic cloves
- 2 tsp sesame seeds (तिल के बीज)
- 1 tsp Turmeric Powder
- 1tsp Garam masala powder
- 2 tbsp Red chilly Powder -
- Salt to taste
- 1tbsp cooking oil
♨METHOD:
✒STEP 1: PREPARE STUFFING
♦Fry the peanuts Keep it aside until needed.
♦Heat the oil in a pan, add the cumin seeds, let them splutter, add the chopped onions, garlic and green chilies. Fry until light brown in color.
♦Add fresh grated coconut, saute it for 1-2 minutes. Keep it aside to cool down.
♦ Take the mixer grinder jar, add following ingredients: Peanuts, fried onions, grated coconut mixture, jaggery, tamarind paste, all dry ingredients and 1 tsp cooking oil or use cooking oil in which onions and coconut are sauteed.
♦ Grind the above mixture without adding water and make a coarse paste. Our stuffing is ready.
✒ STEP 2: SLIT AND STUFF THE BRINJALS
♦Wash the brinjals without removing the tails. Now Slit the brinjals in halfway, so that we can able to stuff in it. You need to slit the brinjals from the tail end, give a cross slit without breaking them into halves, and fill in the above stuffing (prepared in step 1)
✒ STEP 3 : COOKING TIME
♦ Sprinkle few drops of cooking oil in a frying pan, place all the stuffed brinjals. Saute them on slow flame for 1-2 minutes, then add 120 -150 ml of water. Cover the lid and simmer for 15-20 minutes, stir in between. When water gets fully absorbed and brinjals looks soft and well cooked.
♦Remove it from the flame. Garnish it with coriander leaves. Serve it hot.
✒ NOTES:
1. Peanuts can be added in roasted form if you don't want to go with frying option.
2. Water works in good quantity for properly well cooked brinjals.
3. Adjust sweetness of the this recipe as per your preference. If you don't like the sweet taste, add jaggery in very small quantity or completely ignore it or add green chillies in good quantity to adjust the sweetnes.
