Today's blog post is a winter special Indian flat bread made with whole wheat flour, fresh green garlic chives and Indian spices. It is normally served with pickle or yogurt.
Thepla is a staple food of Gujarat. It is cooked using a combination of spices and flavors. These flat breads are super nutritious, lightly spiced, filling and very delectable. They are pretty versatile and can be enjoyed at breakfast time or any time of the day .
In today's thepla recipe, I am going to add a handful of fresh green garlic chives. Fresh green garlic is also known a spring garlic. It is available in winter season only in this part of the world.. Did you know green garlic is notable for its immune boosting properties. We religiously use this ingredient in this season. ♨ Recipe details
- Preparation time 8-10 min
- Cooking time 12-15 min
- Servings 8-10 theplas

♨ Ingredients required
- 150-200 grams wheat flour
- A Handful of fresh green garlic chives
- 1-2 tbsp ghee for dough kneading
- 1-2 tsp red chilli powder
- Salt to taste
- Water
- Ghee or cooking oil
♨ Method
💁Step 1 - mise en place - chopping
◾Green Garlic Chives - wash - drain the water - pat dry - cut into one inch pieces. Keep it aside until called for.
💁Step 2 - Dough Kneading
◾Add ghee and mix it well in the flour mix.
◾Add water slowly and gradually in the center and knead into a medium soft and pliable dough. Cover and rest the dough for about 5-10 minutes.
◾Knead the dough briefly, if needed. Divide the dough into equal sized balls and make the number and size of balls according to your preference.
💁Step 3 Roll and roast
◾Take a dough ball, flatten them with the palm of your hands, Dust it with wheat flour, roll each ball of dough into a thin, flat round of 5-6 inches.
◾Heat a tawa or griddle on medium heat. Place the rolled out round over it. Cook till lightly browned on both sides by adding little ghee.
◾Serve hot with stir fried salted green chillies in ghee, papad, curd or pickle.
