Today's blog post is dedicated to all my friends who religiously follow Navratri rituals as well as fasting. This recipe is slightly different from our regular Raita recipe. Sharing recipe with step by step photos..



Pineapple Raita is a very cool, refreshing and a super delicious accompaniment. It can no doubt be a show stopper as well. Personally, I enjoy this a lot.

☑️  What's so special in this pineapple pomegranate raita?

Well, this is not a regular raita recipe. I simply played with the ingredients with the intent to make it healthy, satisfying and absolutely yummilicious.. 


☑️ Whether It is suitable for Navratri Fasting!

Yes, but I'm still doubtful with one ingredient i.e. Mayonnaise Sauce. Though it is clearly mentioned on the pack as egg less, but still not sure whether this sauce is allowed in fasting or not. But I have some other alternative for this.. You can completely skip and instead of that add fresh cream and butter. (1½ tbsp fresh cream + ½ tbsp butter)


☑️ Which type of pineapple is best suited for this recipe...

You can add as per your preference and availability. Personally, I prefer Del Monte Pine Tidbits for this recipe. 



☑️ How to make Pineapple & Pomegranate Raita 

It is very simple and easy recipe. Blend curd, mayonnaise sauce, sugar, black pepper, pinch of nutmeg powder, olive oil and a handful of pineapple tidbits in a blender jar until smooth and creamy. Hold this in the freezer compartment for 15 minutes, then add pomegranate and pineapple tidbits. Gently mix together until it's well blended. Garnish it with pomegranate, pineapple cubes and coriander leaves. Serve it immediately..

Ingredients needed

  • 1 cup pineapple Tidbits
  • 1 cup pomegranate arils
  • 1 cup hung / thick curd
  • 2 tbsp mayonnaise sauce
  • 1 tbsp olive oil
  • 3-4 tbsp powdered sugar or add according to your taste 
  • 1tsp Black pepper powder
  • Pinch of nutmeg (optional) 
  • 1-2 tsp honey - add if needed - you can skip as well) 
  • Few coriander leaves for garnish 


Method 


✔️Step 1 blend until smooth & creamy

◾Combine curd, mayonnaise sauce, powdered sugar, black pepper powder, handful of pineapple tidbits, nutmeg powder, salt and olive oil in a blender or mixer grinder jar.. Blend together until smooth and creamy.. Transfer into a bowl... Keep it in the freezer compartment for 15 minutes. 












✔️Step 2 Mix, garnish and serve..

◾Transfer curd mayonnaise mix in a serving bowl. Add 90% of pomegranate arils, pineapple tidbits. Gently mix it all together. Garnish it with 10% of pomegranate arils, pineapple tidbits, coriander leaves and pinch of black pepper powder.





◾Serve immediately and enjoy
