Amla & Honey concoction is very good for our overall health. It not only detoxify our body, but, also protect us from various other health related problems. 




Today's recipe is presented after exploring lots of permutation and combination. I really worked very hard on this recipe to get the best results. 




Humidity is one of the biggest obstacles in this amla recipe. I have to deal with not only moisture content in amla but also humidity in the atmosphere. My City has tropical wet and dry climate, which means humid and muggy weather throughout the year. In hot and humid climate it is very common for the fungus to develop on the surfaces.. So, we need to take very good care in this amla preparation.




I am sharing recipe which worked for me.. The action plan for this recipe is as follows 


1. Blanch / boil amla until soft and easy to open. 

2. Take out the seed and cut them into the wedges. 

3. Soak them in sugar dissolved in very little water for 2 days

4. Remove from sugar syrup and leave it to dry.

5. Soak them in Honey




In the third step I have used sugar instead of honey as main reason one should not heat honey or it gets toxic. As per Ayurvedic dietary principles honey should never be heated above 40°C (104°F). As you all know amla is high in water content and after soaking them in honey, it oozes a lot of juices.. Which need to be cooked to preserve it for long, but as honey is not heated, that's why used sugar syrup in this step. 




Let's get started 

  • Preparation time 5-6 days
  • Cooking time 12-15 minutes 

Ingredients required 

  • 500 grams Amla
  • 300 - 350 grams sugar
  • 250 grams Honey or as needed 


Method
Step 1 Mise en place


◾Gooseberries - wash - boil it on slow flame covering the lid for 10-15 minutes until soft and easy to break into wedges. Separate the wedges - discard the seeds - keep it aside until called for.





Step 2 Soak amla 

◾Add ¼ cup and sugar in a saucepan. Cook it on slow fire until sugar is fully dissolved. Allow it to cool down. Soak amla wedges in this syrup for 2-3 days. Please use glass or good quality plastic container for this purpose. Please keep this in cool and dry place and keep checking in between.. I also tried this step by mixing powdered sugar and amla wedges, but that results in crystal form at the bottom.. So to avoid that, started following dissolving sugar in a very little water. .









Step 3 Remove from sugar syrup and leave it to dry..

◾Separate the amla wedges from syrup.. Please don't throw the syrup, rather cook the left over syrup it on slow flame for 15-20 minutes until color changes to golden brown. In this way, we will receive our amla honey syrup. That you can use in green tea or use as a first drink in the morning with lukewarm water.





◾Remove it in a colander and then in a tray allow it to dry for a day or two and also see to it that should not start out very hard. 



◾Lastly, soak them in honey. Please store them in cool and dry place in an air tight container. Always use sterilized bottle and dry and clean spoons. Take very good care in handling them.. Happy cooking..
