I am back with one more summer special salad recipe for you. This salad recipe is perfect to beat the heat. Sharing recipe with step by step pictures. 




Summer is the perfect season for salads. This salad has everything you want in a summer salad. Did you know when salads are prepared with sprouts the nutritional value of salad increases and the addition of fresh veggies, fruits and nuts is like the cherry on top.


Sprouted Moong Bean Salad with Greek Yogurt & Mayonnaise Sauce is a delicious, refreshing, fiber rich, low in calories, protein packed salad. It is made with sprouted mung beans, overnight soaked almonds, grapes, fresh veggies and served with greek yogurt & mayonnaise sauce..

๐Ÿ”นPreparation time 5 -10 minutes 
๐Ÿ”นCooking time nil


☑Ingredients required 


♨ For Salad
๐Ÿ”ธ1 cup Sprouted Moong Beans
๐Ÿ”ธ8-10 overnight soaked almonds 
๐Ÿ”ธ A handful of grapes 
๐Ÿ”ธ½ onion
๐Ÿ”ธ½ tomato
๐Ÿ”ธ1 green chilly 
๐Ÿ”ธCoriander leaves for garnish


♨ For Salad Dressing 
๐Ÿ”น4-5 tbsp Greek yogurt 
๐Ÿ”น2-3 tbsp veg mayonnaise sauce 
๐Ÿ”น6-7 Mint leaves
๐Ÿ”น½ tsp sugar
๐Ÿ”น½ tsp  mint chaas masala powder 
๐Ÿ”นSalt to taste

☑Method

Step1 Mise en place

Almonds overnight soaked - & roughly chopped

Onion - peeled - finely chopped 

Tomato - washed - finely chopped 

Green chillies washed - finely chopped 



Step 2 Salad Dressing 

◾Combine Greek yogurt, mayonnaise sauce, mint masala powder, sugar and a few sprigs of mint and coriander leaves in a blender and blend it to a smooth paste, keep it aside until called for.





Step 3 Mix and serve 

◾Combine all the ingredients in a mixing bowl. Leave 5-7 % for garnish. Add yogurt and mayonnaise sauce. Mix it well. Adjust the seasoning according to your taste.  Now garnish it with  5-7% left earlier - i.e. sprouted moong beans, tomato cubes, grapes, almonds, onion and mint leaves.








◾Keep this salad in the refrigerator for 15-20 minutes. Serve it chilled.

☑How to sprout mung beans



My method of sprouting is very easy. It always works for me. The most important requirements for sprouting are

1. Soaking time of mung beans

2. Temperature 

3. Percentage of water left in the container after soaking..


Summer is the perfect time for sprouting. In winter, it takes little longer time.


♨ Let's get started 


◾Wash and soak mung beans in enough water for 8-10 hours.

◾After that you have to drain the water and rinse once more.

◾The sprouting depends on temperature like the current temperature in this part of the world is 33°C - 35°C and it takes 40-45 hours to get long and perfect sprouts.. 

◾Now in the same container in which mung beans were soaked and rinsed, along with beans, leave 1-2% water. Keep that container in dry and dark place and don't disturb that container. I never follow muslin cloth option as a steel container with fitted lid always works for me. Only thing, your container should be 40% filled with moong beans and 60% empty.
