Today's blog post is Fenugreek aka Methi Veg Fried Rice. Sharing recipe with step by step pictures. 



Methi rice is my one the most favorite rice recipe. I can't express this in words how madly I'm in love with this rice preparation.. Please try this recipe and I guarantee you'll start loving this for sure.. Methi veg fried rice is an awesomely delicious rice recipe made with methi leaves, garlic, green chilies, tomatoes and colorful veggies and flavored with Indian spices.


Today, I had followed draining method for rice preparation, but this rice recipe can also be prepared by absorption method.. I follow both the method depending on the mood and availability of time.


Did you know that methi is actually women's food as after pregnancy Methi leaves and seeds are highly recommended as it not only reduces labour pain but also increases milk in lactating women. If you have a iron deficiency, hormonal imbalance or menstrual discomfort, then Methi leaves and seeds are must for you, and it actually works great as it contains compounds like diosgenin and isoflavones with oestrogen properties which reduces pain, cramps and discomfort associated with PMS. Methi is also beneficial for skin and hair related problems.. And methi is worldwide famous for lowering blood sugar levels as it contains fiber in good quantity that helps in better absorption of carbohydrates and sugar.


What's so special in this Veg Methi Fried Rice Recipe? Well the special thing is the way it is cooked and the ingredients which go in this recipe not only enhance the taste and but it also makes it super healthy. Whoever tasted this recipe the first word that came after tasting is Wow! And then seriously never had this rice before.. Right away after that .... Now, Please tell how you made it or I need a recipe of this.... Well, you don't have to ask me for this as I'm going to share this recipe right now...

☑Recipe details 


▫Cuisine - Indian
▫Preparation time 10-15 minutes 
▫Cooking time 15-20 minutes 
▫Serving 2




☑Ingredients required 

▫1 cup Rice
▫1-2 handful of methi leaves 
▫ 2-3 tomatoes 
▫1 capsicum 
▫1 carrot
▫2-3 tbsp peas
▫10-12 garlic cloves
▫1 inch piece ginger
▫4-5 green chillies (Note this recipe needs chillies in good quantity ... else give you a bland taste) 
▫2-3 tsp desiccated coconut powder
▫2-3 tbsp cooking oil or ghee
▫½ tsp turmeric powder
▫salt to taste



☑Method 
✔Step 1 Mise en Place

Methi leaves - Remove the leaves from the stems - Discard the stems - Wash it nicely - roughly chop it - sprinkle salt over chopped fenugreek leaves, Keep it for 5-7 minutes and then rinse nicely under running tap water with the help of colander...

Tomatoes - finely chopped or puree it.

Ginger - Peeled, roughly chopped 

Garlic - washed, peeled, roughly chopped 

Green chilies - washed - stems removed - roughly chopped. 

Carrot - washed, peeled, cut into small cubes - boiled with rice

Capsicum - washed, cut into small cubes

Peas - boiled with rice

Rice - Cook rice by draining method - Wash and soak the rice for 12-15 minutes. Rinse again - Take the good quantity of water in a saucepan, allow it to boil, add salt and 1 tsp cooking oil- when water starts boiling - add rinsed rice, peas and carrots - cook it on medium to high flame for about 8-10 minutes until 85-90% cooked - Cook rice according to the quality of rice or as per instructions given in the pack. Drain the excess water with the help of colander and keep rice under running tap water for 10-12 seconds- this will halt the cooking process as to avoid rice getting mushy... To check whether rice is cooked or not I follow pressing rice with finger or eating few grains... as that give clear idea.. My family hates uncooked rice.... So I take very good care that it should be perfectly cooked but at the same time not mushy... 


✔Step 2 Execution time

◾Heat oil in a fry pan, add ginger, garlic and green chillies and saute it for 15- 20 seconds.

◾Add tomato puree and cook it on high fire for about a minute or two..

◾Add Methi leaves, mix well and saute for 3-5 minutes.

◾Add desiccated coconut powder, turmeric and salt to taste. Mix it all well. Cook it for a minute or two.

◾Add cooked rice and capsicum , mix it well and stir fry for 2-3 minutes. 



◾Our rice is ready to dish out, Serve hot with your favorite Raita.
