Methi Muthia




How to prepare Methi Muthia | Fried Fenugreek Muthia Recipe | Recipe of Muthia for Undhiyu | Muthiya - Methi Dhokli


Methi Muthia is a Gujarati delicious snack recipe made from gram flour and whole wheat flour. It is flavoured with a goodness of fresh fenugreek leaves and aromatic spices. This snack recipe can be enjoyed steamed as well as fried way.




The muthia recipe which I am partaking in today is the fried version of muthia. I have made this for my Undhiyu recipe and given them round shape, but actually its cylindrical in shape. The recipe name is derived from the way it is formed. Muthia is a Hindi word, which is taken from the word muthi, which means Fist hand - 'gripping' action of the hand.

♨INGREDIENTS REQUIRED FOR MAKING METHI MUTHIA


  • 5 tbsp gram flour (Besan)
  • 3tbsp wheat flour (preferably coarse one - use Daliya and grind it till you get bread crumbs texture)
  • 1tsp Ajwain (carom seeds / Owa)
  • 2tsp red chilly powder
  • 1tsp turmeric powder
  • Salt to taste
  • 1tbsp sugar
  • 1tsp cooking soda 
  • 1tbsp ginger, green chili paste
  • 1tbsp sesame seeds
  • 1tbsp Lemon juice
  • 1 handful fenugreek leaves
  • 1 tbsp coriander leaves
  • Cooking oil for deep frying




♨STEP BY STEP METHOD OF MAKING METHI MUTHIYA


♨STEP1: BLANCH METHI LEAVES AND CORIANDER LEAVES 


♦ I love to follow the blanching process on green leafy vegetables. This process, not only help us to clean mud and impurities from the green leafy vegetables, but also results in retaining their natural green color and crunch. (This process will take 2 minutes)




♨ STEP 2: PREPARE MUTHIA DOUGH


(Use glass container as works best when kneading gram flour dough)



♦ Get hold of the kneading bowl. Mix all the dry ingredients i.e. (besan, wheat flour, cilantro leaves, ajwain, sesame seeds, cooking soda and salt to taste)



♦Add Methi leaves and ginger paste, rub Methi leaves in flour mix, add 1tsp cooking oil, lemon juice and very little water. Mix it up to form a moist mixture.



♦ Grease your hand with little oil and take 1tsp mixture in your palm and shape them in rounds or small cylinders shapes.


♨ STEP 3 : DEEP FRYING OF METHI MUTHIAS


♦Deep fry them in medium-hot oil until they are crisp and well cooked.




♦ Remove from heat and place it on a plate. Serve hot with any chutney of your choice.

✔ NOTES:- What is Blanching 


♦ Blanching is a method of cooking. In this cooking method vegetables are plunged into a large pot of boiling water for just a minute or two and then immediately transferred into a colander and then under running water tap. The intent of following this method is to clean the vegetables and at the same time retain their natural color.
