Today I'm going to share one more summer special recipe. Relish your taste buds with this Mangolicious treat. Aamrakhand is an absolute summer delight. It is very delicious and refreshing during hot summer days. It is made with strained curd, mango puree and flavored with saffron and cardamom powder. Sharing recipe with step by step photos.


Aamrakhand is a variant of Shrikhand. Aam + Shrikhand = Aamrakhand. It is best accompanied with Poori as regarded as made for each other. Poori is a unleavened deep fried Indian bread. During the summer season this is the most preferred food in the western part of India.

Recipe details 

  • Preparation time - 8-10 hours
  • Cooking time 2 minutes

Ingredients required 

  • 500 grams homemade fresh curd - preferably made with full fat milk
  • 4-5 tbsp sugar or as preferred 
  • 4-5 tbsp Mango Pulp
  • 1-2 tbsp warm milk
  • 6-8 saffron strands
  • Pinch of cardamom powder

For garnish

  • 1-2 Pistachios - finely chopped 
  • 1-2 almonds - finely chopped 
  • 1-2 Saffron strands

✅Step 1. Mise en place

Mangoes - Puree it


◾In a medium saucepan, combine sugar and ¼ cup water. Bring it to a boil. Continue stirring until the sugar is completely dissolved. Leave it to cool down a little. Add the chopped mango pieces. Allow it to cool down completely and then keep in the freezer compartment for 20-25 minutes. Blend until it becomes smooth and creamy. 









Separate out the curd 

◾Set a strainer over a large mixing bowl and line it with muslin cloth. Place the curd into a muslin cloth, wrap the muslin cloth and hang it overnight over a bowl in a refrigerator and drain the whey completely from the curd.









Saffron 
◾soak the saffron strands in 2 tbsp warm milk.







✅Step 2 Aamrakhand preparations



◾Take hung curd in a mixing bowl, add saffron soaked in milk. Whisk it well until it is lump free, smooth and creamy. Add the mango puree. Whisk it up. Add the cardamom powder. Mix it all well.











◾Place it in the refrigerator for 45-50 minutes. Garnish it with nuts. Serve it chilled..
