Today, I'm going to share one more super quick summer special okra recipe. Sharing recipe with step by step pictures.



Today's Okra aka Bhindi Hara Masala recipe is designed for the summer season. The USP of this recipe is that it is transformed into the effortless recipe from the complicated, lengthy preparation that too without compromising on taste part.



It's really very hot in this part of the world that's why I keep exploring to create recipes that work best in this season.




Aloo Bhindi Hara Masala is religiously cooked vegetable in our house. You know the best thing about this bhindi recipe is that it is very delicious and healthy bhindi recipe. This recipe has semi liquid consistency and can be enjoyed with any type of Indian bread. Fresh coriander leaves are used in good quantity in this recipe. Fresh coriander leaves, garlic, tomatoes and green chilies combo make this dish heavenly delightful, and also helps in providing good amount of fiber, vitamin C, folic acid, calcium and potassium.

🔸Preparation time 10-12 min
🔸Cooking time 15-20 min
🔸Cuisine Indian
🔸Servings 3-4

☑Ingredients required

🔹300 grams okra - bhindi
🔹2-3 medium potatoes
🔹1 small piece ginger
🔹1tsp turmeric powder
🔹1 tsp red chilli powder
🔹3-4 tsp coriander powder
🔹Salt to taste
🔹1 tbsp cooking oil



☑For green coarse paste


🔸2-3 handful of coriander leaves
🔸3-4 medium tomatoes
🔸2-3 green chillies
🔸1 bulb garlic or add according to your taste
🔸5-6 curry leaves



☑Method


♨ Step 1 Mise en place


Bhindi - Okra - Wash - pat dry - trim the ends - cut it into small pieces.. Keep it aside until called for.



Potatoes - washed  - cut into small cubes




Coriander leaves - washed and roughly chopped

Tomatoes - washed and roughly chopped

Garlic - peeled

Ginger - peeled and roughly chopped



♨ Step 2 Make a coarse paste

Note: Please don't make it a very fine paste.. We need coarse paste for this recipe.


◾Combine fresh coriander leaves, green chillies, tomatoes in a mixer grinder jar and coarsely grind it. Add garlic and pulse for 3-5 seconds. Keep it aside until called for.





♨ Step 3: Cooking time


◾Heat oil in a frying pan. Add coarsely grinder green paste. Stir fry on medium to high flame for 2-3 minutes.



◾Add red chilly powder, turmeric powder, coriander powder and salt to taste.. Mix well.





◾ Add sliced bhindi's and potato cubes and 1cup of water. Cover with the lid and simmer for 10-12 minutes until done.








◾Finally garnish it with coriander leaves. Serve hot with rice or chappati.
